Marcona Almonds (Salted/Fried)
Marcona Almonds (Salted/Fried) Be the first one to write a review

Originating in Spain and recognized as the "Queen of almonds," Marcona kernels are plump, finely textured and crunchy, with a delicate flavor and sweetness.

These wonderful Spanish Marcona Almonds are sauteed in extra virgin olive oil, sprinkled with sea salt, and then vacuum sealed for maximum flavor and freshness. A beautiful balance of flavors... perfection!

Unlike most of our competitors who have almond pieces mixed in with whole almonds, we hand select the almonds and deliver only whole almonds to you. Our competitors also tend to use a lower quality sunflower oil, whereas we use extra virgin olive oil. It is a difference you can taste!

In order to ensure maximum flavor and freshness, these Marcona Almonds are vacuum-sealed. Therefore they can be stored anywhere, like your cabinet, desk drawer, or car, for a quick, healthy snack. They are also perfect to serve with aperitifs, as a complement to a cheese plate, or placed along side fresh fruit for dessert.

This product contains no gluten, dairy, or genetically engineered ingredients.

Ingredients: Marcona Almonds, olive oil, salt

2.2 pound vacuum sealed bag

Pinoli 100% Italian Pine Nuts
Pinoli: 100% Italian Pine Nuts Be the first one to write a review

These are the only certified 100% Italian Pine Nuts in the USA. They even go through customs with their own certificate of authenticity.

To find these gems Ritrovo scoured Italy, eliminating from consideration any pine nuts that might be blended from Turkish or Greek sources, and completely shying away from the oilier, more rounded and petite, central Asian and Chinese nuts which can cause "pine mouth". They found a certified 100% Italian source of pine nuts, our great friends Nicola DeLaurentiis and his wife Paola at Casina Rossa. We are happy to be able to offer them to you. Enjoy!

Arroyabe Bonito del Norte Ventresca White Tuna Belly
Arroyabe Bonito del Norte "Ventresca" White Tuna Belly Be the first one to write a review

Saveur Magazine said Bonito tuna is "one of the great gastronomic pleasures of every day life."

The belly or "Ventresca" of the Bonito del Norte Tuna is the tastiest, fattiest, and tenderest part of the fish. It is melt-in-your-mouth delicious! It presents a much lighter and sweeter palate than the rest of the flesh of the fish, and is considered an exquisite delicacy.

The Bonito del Norte is the most valued member of the tuna family - highly appreciated for its white flesh, exquisite flavor, and delicate texture. This is not the boring albacore you buy in the supermarket!

It is fished using traditional hook and line methods, thus preserving the wonderful texture and flavor which is often lost when fishing with nets. Only the best of the catch is selected to ensure exceptional taste, freshness, and quality. This dolphin-free tuna from the Basque region of Spain (Bay of Biscay in northern Spain) is then gently cleaned by hand.

We love it in:

  • Tuna sandwiches
  • Stuffing piquillo peppers
  • Pairing with grilled fennel
  • Salads
  • Antipasto
  • Hors d'oeuvres
  • Putting them on crackers or sliced baguette for an easy, tasty, and healthy appetizer.

Average rating:

These exquisite anchovies, packed in the finest Spanish olive oil, are hand-packed according to traditional methods using carefully selected fresh fish harvested off the Cantabrian Coast in northern Spain.

The anchovy, a traditional food of the Basque Country, is a mainstay of this region's fishing economy. The Spanish name "boqueron" comes from the size of the anchovy's mouth or boca, which is large in proportion to the rest of the body. Anchovies are typically harvested in the spring when they accumulate the most fat and flavor. Small nets are used to protect the quality of the fish and reduce by-catch. Once caught they are gutted, placed in barrels with salt-layer separations, and weighted. Once the fish have matured, about 3-7 months, they are washed to remove the bones and skin, and then canned in high quality olive oil.

Anchovies are high in Omega-3 fatty acids which reduce cholesterol and help in the prevention of cardio-vascular disease. They are also rich in iodine, calcium, Vitamins A, D, B12, B6, B2, and unsaturated fatty acids such as linoleic acid.

The most wonderful small sardines in olive oil we have ever tasted come from the Estuaries of Galicia, Spain. This is a true Spanish food gem and we are very pleased to be able to offer it to you.

Rich in vitamins D and B12, they are also an excellent source of calcium and omega-3 fatty acids.

The Spanish believe canned seafood is a delicacy to be shared and enjoyed! They take great pride, and great care, to harvest the best seafood and package it with the utmost care. The result is the purest, most delicate, and exquisite tasting seafood on the planet! A true delicacy.

Do NOT be fooled by other sardines. Conservas de Cambados makes a "Gourmet" line, which is their highest quality, and the ONLY ones we sell. "Gourmet" is clearly at the top of the front label as shown in the photo, the "Conservas de Cambados" logo is prominently displayed, and the tin is rectangular with rounded corners. Their other line "Bogar/Alamar" is made with imported seafood (not from Spain) or with lower quality seafood from outside of Galicia.

When in doubt verify the front label says "Gourmet" at the top, "Made in Spain by CONSERVAS DE CAMBADOS, S.A. FDA 15066" at the bottom, shows the "Conservas de Cambados" logo, and it is in a rectangular tin with rounded corners.

The Griottines® recipe uses the special Oblachinska Morello Cherry. This cherry is only grown in the Balkans, and is known for its unique taste. During harvest each cherry is hand-picked, leaving the stalk behind. A rigorous sort process selects the best cherries, and within 6 hours of harvesting the first maceration occurs. This artisanal process, and attention to detail, preserves the special flavor and physical properties of the cherries. The Morello cherries, and the liqueur, through natural osmosis, become something magical. Another sort process selects only the perfect cherries. The pit of each cherry is then carefully removed through the hole left by the missing stalk. The cherries look whole but do not have the pit. These depitted cherries are then macerated in different liqueurs for different time periods based on a secret, traditional recipe. They are delivered to you for maximum enjoyment!

Expected arrival: late December 2018

Rose petals are one of over fourteen (14) spices added to give this Belazu Rose Harissa paste its complex and spicy taste. Harissa was originally a staple of Tunisian cooking but now it is used throughout North Africa as a seasoning. The rose petals provide a counter point to the chili heat, adding a richness and complexity you are sure to enjoy.

Harissa is perfect for adding to traditional North African tagines, and for stirring into couscous. However, this is such an extremely versatile product so do not restrict its use to only traditional North African recipes. You can use it as an added seasoning like salt and pepper to add complexity to your meals, and as a dip for bread, crackers, and vegetables.

  • Add a teaspoon to your pasta sauces.
  • Stir a dollop into soups to for an exotic finishing touch.
  • It makes a perfect marinade for chicken breasts when combined with some extra virgin olive oil and lemon juice.
  • It is fantastic smothered over grilled meats, poultry, fish, and roasted vegetables.
  • Stir some into yogurt or relish to serve as an accompaniment to your meals.
  • Combine a spoonful of harissa with several tablespoons of creme fraiche and some coriander for an instant dip.
  • Use it in Yotam Ottolenghi's recipe Straccetti with red mullet, harissa and black olives

Belazu Beldi Preserved Lemons
Belazu Beldi Preserved Lemons Be the first one to write a review

Preserved doqq lemons are an authentic, and essential, component of many North African, Mediterranean, and Indian recipes.

These traditional doqq lemons (Citrus limonum Risso var. pusilla R), known in Morocco as citron beldi, or l'hamd beldi, grow in the Taroudant region outside of Agadir.

The thinner skin, and fragrant aroma, of doqq lemons, makes them the most highly prized lemons of North Africa. Paula Wolfert, an expert on Moroccan cuisine, considers them the crème de la crème in her book "The Food of Morocco".

These lemons have a delicate "zing", along with a tantalizing sweet and sour aroma, that is unmistakably and evocatively North African.

A few serving ideas:

  • Add these lemons to tagines, roast chicken, fish, salsas, and salads - all kinds of Mediterranean cooking, to get that delicate citrus flavor.
  • Make a traditional Moroccan Tagine.
  • Create your own Ngam nguv, a traditional Cambodian chicken soup with whole preserved lemons.
  • Combine them in your recipes that use olives, artichokes, seafood, veal, chicken, and rice for added flavor and complexity.
  • Use them as an accompaniment to curd rice, which is often the last course in South Indian Cuisine.
  • Add the pickled pulp and liquid to Bloody Marys and other beverages where lemon and salt are used.
  • Combine preserved lemons with horseradish if you want to make an American-style cocktail sauce.

They are so easy to incorporate into your recipes, simply give them a quick rinse under cool water to remove any excess salt, and then chop them up... you use the entire lemon, rind and all!

Note: preserving the lemons in salt removes the bitterness normally associated with the rind and pith... what you will find is a clean, bright, pure lemon flavor! Take a slice, pop it in your mouth, and see how magical preserved lemons can be!

No artificial flavors, colors, or preservatives.

Suitable for vegetarians and vegans.

Gluten-free.

Refrigerate after opening.

Sliced Black Truffles (Savini)
Sliced Black Truffles (Savini) Be the first one to write a review

The Savini family business is world famous for their truffles. Starting in the 1920s, and continuing to this day, the family tradition of handcrafted truffle products has spanned over four generations.

During the harvest, the truffle gatherers collect both large and small truffles. The biggest ones are sold fresh to restaurants, while the smaller ones, with equally impressive flavor, are sliced, and through a very special proprietary method, preserved in olive oil. The flavor is identical to the fresh truffles, with the added benefit that you can keep them unopened in your kitchen for more than a year, and thus can have "fresh truffle flavor" anytime on a moment's notice.

These sliced black truffles are of the highest quality, and the Savini family ensures the origin of each and every truffle. This guarantees both the quality and freshness. Every jar shows a "best by" date so you know you are getting the freshest truffles available.

  • Start your day off with a perfectly cooked egg and some sliced black truffles.
  • Stuff sliced black truffles under the skin of a chicken before roasting.
  • Add some slices to freshly cooked pasta... amazing!
  • A few slices on hot seared or grilled scallops is otherworldly.
  • Mix them into your risotto 15 minutes before it is done to make truffle risotto!
  • Save the olive oil, and you have authentic truffle oil!

Ingredients: 50% Italian black truffle (Tuber aestivum Vitt.), olive oil, salt, truffle flavor, garlic, herbs, spice.

Kizami Wasabi (8.8 ounce)
Kizami Wasabi (8.8 ounce) Be the first one to write a review

This fresh Japanese wasabi is chopped and marinated in soy sauce.

It is great on seafood, noodles, and meats.

Serving Suggestions:

  • Sashimi:
    • Place the wasabi on top of the sashimi to bring out the deliciousness of the sashimi and the sweetness of the dipping soy sauce.
    • Adjust the amount of wasabi accordingly. The trick to truly enjoying wasabi is to adjust the amount depending on what you are eating. Use slightly less wasabi for lightly flavored white fish, and use plenty for fatty tuna and meats.
  • Soba:
    • The secret is to maintain the true flavors of the soba, broth, and wasabi. We suggest you never mix the wasabi in with broth, it ruins the flavor of the wasabi. Instead, try placing the wasabi on the soba and then gently dip the soba into the broth to enjoy the flavor of each ingredient.
    • Another way to enjoy wasabi with soba is to first eat some soba, and then eat some wasabi. The wasabi acts as a palate cleanser.

Once you taste real, fresh wasabi, you will never use wasabi paste and powders again!

WuWanWo means "forget me not", an apt name for a product with unique origins and an unforgettable flavor. WuWanWo is a collaborative effort between Piranske Soline and Taiwanese soy sauce makers. They weave their centuries-old traditions together to create a soy sauce with a sweet, oceanic aroma, and meaty taste.

This precious sauce is produced using only indigenous black soybeans, Piranske Soline sea salt from the Piran Salt Pans in Slovenia (a very famous salt source), brown sugar, and natural seasonings. This soy sauce is produced with absolutely no preservatives and it uses all non-GMO ingredients. Its balanced yet complex flavor is achieved through natural fermentation in traditional terra cotta pots for 180 days. The sauce is simply extracted from the pots and bottled.

It is an excellent umami foundation for marinades and salad dressings, and it will elevate your dishes to new heights your taste buds have never imagined!

This "Rich" soy sauce is characterized by bold, meaty flavors. Try it with stir-fried vegetables, rice, steamed fish, seafood, stewed or grilled meats, and in barbecue sauces and glazes.

This was featured in "The Rosengarten Report" where he said:

"...it is extraordinary! Also made with non-GMO black soybeans, no wheat, and a 180-day fermentation, it is simply one of the most complex soy sauces I’ve ever tasted. The flavors are umami from not just Slovenia, but maybe even Mars (including an incredible blast of mushroom-like intensity). It’s very, very salty (as if to emphasize the Slovenian connection), but it finishes in the mouth with a lovely roundness. I love it for crudo: I buy me some very fresh fish, slice it sashimi-style, and gloss it lightly with Hei-Jin and extra virgin olive oil. Of course, feel free to use it in high-level Chinese and Japanese cooking as well.”

Premium Bottarga of Grey Mullet
Premium Bottarga of Grey Mullet Be the first one to write a review

Immediate shipping via USPS Priority Mail

"Mr. Trikalinos, your bottarga is a great product! We need to spread it to the world, like the Spanish Jamon. If products like yours did not exist, we would not be able to create!", said Ferran Adria of el Bulli.

Bottarga, dried and salted Grey Mullet roe, is normally served shaved or grated and has numerous applications.

Proper Care for maximum flavor and longevity:

  • Store your bottarga in your refrigerator.
  • Since it is cured it can last 5 years!
  • Serve by cutting off a piece, removing the wax, and then slicing, chopping, or grating it.

NOTE: Getting the wax off is easiest when the bottarga is allowed to warm to room temperature. To grate the bottarga, remove the wax, put it back into the refrigerator, and grate it cold. Slices can be made either warm or cold.

Recipe ideas:

What makes Trikalinos Bottarga so special?

  • Produced exclusively from Grey Mullet Roe, recognized as the best roe for Bottarga production.
  • Standardized production techniques properly balance the salting and drying processes to deliver higher moisture and lower sodium than other Bottarga producers.
  • It is coated by natural food-grade bee’s wax, which preserves the product and its delicate taste during its shelf life.

Trikalinos Premium Grey Mullet Bottarga is listed among Ferran Adria’s 30 unique food product choices in Hannah Collins’ new book: "The Fragile Feast, Routes to Ferran Adria".
