The Griottines® recipe uses the special Oblachinska Morello Cherry. This cherry is only grown in the Balkans, and is known for its unique taste. During harvest each cherry is hand-picked, leaving the stalk behind. A rigorous sort process selects the best cherries, and within 6 hours of harvesting the first maceration occurs. This artisanal process, and attention to detail, preserves the special flavor and physical properties of the cherries. The Morello cherries, and the liqueur, through natural osmosis, become something magical. Another sort process selects only the perfect cherries. The pit of each cherry is then carefully removed through the hole left by the missing stalk. The cherries look whole but do not have the pit. These depitted cherries are then macerated in different liqueurs for different time periods based on a secret, traditional recipe. They are delivered to you for maximum enjoyment!

Regionally famed and historic Sfusato lemons from coastal Campania are carefully air-dried, and perfectly ground, by food artisan Michele Ferrante. This culinary powder brings the evocative flavor of the limonaii of Campania to fish dishes, desserts, and risottos.

We love to take endive leaves, spread in some room temperature Boursin cheese, and add a sprinkle of Lemon Peel Powder.... WOW!

This is a small production, and seasonal item. We wait for the lemon harvest, and then for the drying, and then for them to ship it to us. So please consider buying 4, 6, 12 months worth at a time as it does sell out by mid-summer.

One of Modena's most distinguished Balsamic vinegar manufacturers produces this delicate condiment which blends white grape must with white wine vinegar. A condiment rather than a vinegar because of its low acidity, the White Balsamic follows the standard methods of Balsamic Vinegar production. The white grape must is cooked at low temperatures in a vacuum to avoid darkening the blend before it is matured in a series of wooden oak casks.

Preserved doqq lemons are an authentic, and essential, component of many North African, Mediterranean, and Indian recipes.

These traditional doqq lemons (Citrus limonum Risso var. pusilla R), known in Morocco as citron beldi, or l'hamd beldi, grow in the Taroudant region outside of Agadir.

The thinner skin, and fragrant aroma, of doqq lemons makes them the most highly prized lemons of North Africa. Paula Wolfert, an expert on Moroccan cuisine, considers them the crème de la crème in her book "The Food of Morocco".

These lemons have a delicate "zing", along with a tantalizing sweet and sour aroma, that is unmistakably and evocatively North African.

A few serving ideas:

  • Add these lemons to tagines, roast chicken, fish, salsas, and salads - all kinds of Mediterranean cooking, to get that delicate citrus flavor.
  • Make a traditional Moroccan Tagine.
  • Create your own Ngam nguv, a traditional Cambodian chicken soup with whole preserved lemons.
  • Combine them in your recipes that use olives, artichokes, seafood, veal, chicken, and rice for added flavor and complexity.
  • Use them as an accompaniment to curd rice, which is often the last course in South Indian Cuisine.
  • Add the pickled pulp and liquid to Bloody Marys and other beverages where lemon and salt are used.
  • Combine preserved lemons with horseradish if you want to make an American-style cocktail sauce.

They are so easy to incorporate into your recipes, simply give them a quick rinse under cool water to remove any excess salt, and then chop them up... you use the entire lemon, rind and all!

Note: preserving the lemons in salt removes the bitterness normally associated with the rind and pith... what you will find is a clean, bright, pure lemon flavor! Take a slice, pop it in your mouth, and see how magical preserved lemons can be!

The most wonderful small sardines in olive oil we have ever tasted come from the Estuaries of Galicia, Spain. This is a true Spanish food gem and we are very pleased to be able to offer it to you.

Rich in vitamins D and B12, they are also an excellent source of calcium and omega-3 fatty acids.

Do NOT be fooled by other sardines. Conservas de Cambados makes a "Gourmet" line, which is their highest quality, and the ONLY ones we sell. "Gourmet" is clearly at the top of the front label as shown in the photo, the "Conservas de Cambados" logo is prominently displayed, and the tin is rectangular with rounded corners. Their other line "Bogar/Alamar" is made with imported seafood (not from Spain) or with lower quality seafood from outside of Galicia.

When in doubt verify the front label says "Gourmet" at the top, "Made in Spain by CONSERVAS DE CAMBADOS, S.A. FDA 15066" at the bottom, shows the "Conservas de Cambados" logo, and it is in a rectangular tin with rounded corners.

In a mild mini-climate near the town of Guèrande in the cultural region of Brittany, France there are centuries old salt fields. In this unique location the currents of the Atlantic run cleaner than in many of the other salt harvesting regions of France. As a result, Guèrande produces the best salt in all of France.

On warm, breezy afternoons from May to September, an artisan paludier (craftsman salt harvester) like Gilles Hervy can "sweep" the crystallized top of the evaporating sea water. This harvested salt, the Fleur de Sel, is the most delicate, purest part of the saline. What remains and crystallizes throughout the rest of the season is the Sel Gris. For every 80 pounds of Sel Gris produced, they can harvest only one pound of the precious Fleur de Sel.

Fleur de Sel is an all-natural sea salt from Brittany, France. It is unprocessed, unrefined, and unadulterated. It does not contain anti-caking or anti-flowing agents. It is known as the "Caviar of Salts".

The Gilles Hervy family (husband, wife, two sons, and a daughter) sells the best, most consistent quality Fleur de Sel in the world.

Kampot Salted Long Peppercorns (Organic)
Kampot Salted Long Peppercorns (Organic) Be the first one to write a review

Fruits of the long pepper are harvested by hand, still green and before maturity. They are washed and blanched and undergo a complex process of fermentation with Kampot salt. Developed at La Plantation, this fermentation reinforces the flavor that is like the fresh green pepper picked and eaten from the pepper tree.

It can be eaten alone or cut into thin slices on a salad, on fruits and according to your inspiration.

Kampot Red Long Peppercorns (Organic)

Kampot Red Long Pepper, "Piper retrofactum", is a flowering vine of the family of peppers, originally from Java, Indonesia. The first reference to long pepper appeared in Indian textbooks of Ayurvedic medicine, where its medicinal and dietary benefits are described in detail. Very popular in Roman and Greek times, it was one of the first spices to reach Europe, from the 6th or 5th century BC.

In 2010, this “comeback” pepper earned Protected Geographical Indication (PGI) status from the World Trade Organization, becoming to pepper what Champagne is to sparkling wine or Prosciutto di Parma is to ham.

We love this sweet & spicy peppercorn on sauteed fruits like pears and pineapples, on salads, chicken, and fish, or tossed whole into a slow braise.

Kampot White Peppercorns (Organic)

Most white pepper is produced from black peppercorns, so they must sometimes soak for several weeks to remove the envelope, giving the white pepper a strong and unpleasant aroma.

White Kampot Pepper is one of the few peppers in the world to be produced from the full-grown red corns. The red corns are picked one by one on the bunch. They are then washed, threshed and spend a night in a tank of clear water. The skin surrounding the kernel is then very soft and can easily be removed. The corns are washed several times and sun-dried for two to three days.

It stands out by its creamy white to beige color and its real, pure pepper aroma. It can be ground fresh on grilled fish, shrimp, scallops, and shellfish like clams and oysters. We also love it on chicken. White Kampot Pepper will give a wonderful flavor to your sauces and broths.

Harvested by hand at full maturity, and then cleaned and sun-dried, these whole peppercorns are the flagship product of the PGI appellation. Its unique taste is less spicy than black peppercorns, and offers sweet notes of red fruits, prunes, dates, and honey. Its exotic perfume is amazing on your salads and main courses. For a special treat try it on strawberries or pears, where its delicate aroma can really shine, and don't forget to try it in chocolate, from ice cream to brownies to chocolate ganache... A fun and tasty treat!

The Kampot red and white peppers are extremely rare peppers because of the difficulty in harvesting them at the right moment at full maturity and the need to have a large enough workforce to pick these peppercorns by hand.

Kampot Black Whole Peppercorn is recognized as one of the best peppers in the world.

Kampot Salted Green Peppercorns (Organic)

Fresh Salted Pepper can be eaten alone as an aperitif and used to salt nuts as a snack. We advise you not to cook it, just possibly heat it slightly at the end of cooking or in a sauce, so that it keeps its crunchy texture. It is perfect sprinkled on top of meats such as beef or duck, and will surprise your guests in a chocolate mousse or on ice-cream or grilled fruits.

The green peppercorns are washed and blanched and undergo a complex process of fermentation with Kampot sea salt. This fermentation reinforces the flavor that is like the fresh green pepper eaten fresh in Cambodia. Traditional recipes in the Kampot and Kep regions use a lot of fresh green pepper (Kep crab or prawns fried with green pepper, as well as many salads and local dishes). Green pepper cannot be kept fresh and must be eaten within 3 or 4 days so this salting process preserves the same flavors so it can be delivered to you!

Fresh Salted Pepper (Kampot IGP) is an exclusive production of La Plantation. Addictive from the first corn, the Fresh Salted Pepper from La Plantation is ready to consume. The privileged ones who had the chance to taste it have become crazy about the crunch and wonderful flavor.

Artisan quality La Chinata (Denomination of Origin "Pimentón de la Vera") is generally accepted as the best. It is grown, smoked, and milled in the micro-climate of La Vera, Spain not far from where Columbus presented the first plants to Ferdinand and Isabela.

You will find this pimentón wood smoked paprika is a unique and versatile seasoning. If there is one spice that captures the essential flavor of Spain, it is this one. This is not the bland paprika you get at the local supermarket. Three different varieties of pimiento are slowly smoked over a low flame to produce a superb, intense flavor.

You will discover that our La Chinata Smoked Paprika is an excellent addition to some of your favorite recipes.
