The Griottines® recipe uses the special Oblachinska Morello Cherry. This cherry is only grown in the Balkans, and is known for its unique taste. During harvest each cherry is hand-picked, leaving the stalk behind. A rigorous sort process selects the best cherries, and within 6 hours of harvesting the first maceration occurs. This artisanal process, and attention to detail, preserves the special flavor and physical properties of the cherries. The Morello cherries, and the liqueur, through natural osmosis, become something magical. Another sort process selects only the perfect cherries. The pit of each cherry is then carefully removed through the hole left by the missing stalk. The cherries look whole but do not have the pit. These depitted cherries are then macerated in different liqueurs for different time periods based on a secret, traditional recipe. They are delivered to you for maximum enjoyment!

Preserved doqq lemons are an authentic, and essential, component of many North African, Mediterranean, and Indian recipes.

These traditional doqq lemons (Citrus limonum Risso var. pusilla R), known in Morocco as citron beldi, or l'hamd beldi, grow in the Taroudant region outside of Agadir.

The thinner skin, and fragrant aroma, of doqq lemons, makes them the most highly prized lemons of North Africa. Paula Wolfert, an expert on Moroccan cuisine, considers them the crème de la crème in her book "The Food of Morocco".

These lemons have a delicate "zing", along with a tantalizing sweet and sour aroma, that is unmistakably and evocatively North African.

A few serving ideas:

  • Add these lemons to tagines, roast chicken, fish, salsas, and salads - all kinds of Mediterranean cooking, to get that delicate citrus flavor.
  • Make a traditional Moroccan Tagine.
  • Create your own Ngam nguv, a traditional Cambodian chicken soup with whole preserved lemons.
  • Combine them in your recipes that use olives, artichokes, seafood, veal, chicken, and rice for added flavor and complexity.
  • Use them as an accompaniment to curd rice, which is often the last course in South Indian Cuisine.
  • Add the pickled pulp and liquid to Bloody Marys and other beverages where lemon and salt are used.

The most wonderful small sardines in olive oil we have ever tasted come from the Estuaries of Galicia, Spain. This is a true Spanish food gem and we are very pleased to be able to offer it to you.

Do NOT be fooled by other sardines. Conservas de Cambados makes a "Gourmet" line, which is their highest quality, and the ONLY ones we sell. "Gourmet" is clearly at the top of the front label as shown in the photo, the "Conservas de Cambados" logo is prominently displayed, and the tin is rectangular with rounded corners. Their other line "Bogar/Alamar" is made with imported seafood (not from Spain) or with lower quality seafood from outside of Galicia.

When in doubt verify the front label says "Gourmet" at the top, "Made in Spain by CONSERVAS DE CAMBADOS, S.A. FDA 15066" at the bottom, shows the "Conservas de Cambados" logo, and it is in a rectangular tin with rounded corners.
