These are best in spirit-forward cocktails of almost any kind ranging from the Old Fashioned (you pick the spirit, it will sing) to any aperitif/digestif you can imagine.
The predominant ingredient in these rippin’ bitters extracted from house distilled rye (Willamette, grown by Camas) and red corn (Oaxaca, grown by Masienda) is Newtown Pippin cider apples from 5 Mile Orchard, organically grown 50 miles from the distillery. With the help of their friends, they crushed tons of apples, naturally fermented them into cider and then they blended the cider with a high proof maceration of Cloud Forest Yellow Cardamom, Royal Cinnamon, Ea Sar Peppercorn, Pemba Clove, Eleuthero, Suma, and Gentian.
Super different from any other Apple Bitters on the market: the flavor profile is not based on sweet baking spice/apple pie. Instead, the focus is on exemplifying the flavor profile of this cider apple.

This wonderful chocolate, spicy, and slightly savory bitter was specifically designed to compliment tequila and mezcal cocktails, but also tastes great with bitter orange Campari cocktails!

We love it in this cocktail: 3 ounces Del Maguey Vida Mezcal, 3 ounces grapefruit juice, 1 ounce lime juice, 1 ounce Orgeat, several dashes Mole Bitters. Served on the rocks. The Griottines® recipe uses the special Oblachinska Morello Cherry. This cherry is only grown in the Balkans, and is known for its unique taste. During harvest each cherry is hand-picked, leaving the stalk behind. A rigorous sort process selects the best cherries, and within 6 hours of harvesting the first maceration occurs. This artisanal process, and attention to detail, preserves the special flavor and physical properties of the cherries. The Morello cherries, and the liqueur, through natural osmosis, become something magical. Another sort process selects only the perfect cherries. The pit of each cherry is then carefully removed through the hole left by the missing stalk. The cherries look whole but do not have the pit. These depitted cherries are then macerated in different liqueurs for different time periods based on a secret, traditional recipe. They are delivered to you for maximum enjoyment!

We love these candied, sweet, and delicious Martin Sec Pears which are native to the Province of Cuneo in Northern Italy. These candied pear cubes are perfect for folding into batters and doughs, filling crepes, mixing in or topping ice cream and gelato, and are wonderful in panna cotta.
Ingredients: glucose syrup, pear (28%), sugar.
These cubes of candied orange are made from fragrant bitter-sweet Sicilian oranges. They will bring a lovely orange flavor to crepes, breads, cookies, cheesecake, panettone, ice cream, gelato, and chocolate tarts.
In baking we simply add these directly into the batter or dough.
These cubes of candied lemon are made from Sicilian lemons which have a lovely, bright flavor. The sharpness normally associated with lemons is softened by the sugar syrup while retaining the freshness. These candied lemon cubes are great in homemade ice cream, gelato, baking (fruit cakes, cup cakes, chocolate desserts, panettone), and cocktails.

Smoky, briny and succulent, our smoked octopus is a special treat.
Monterey Bay Seafood Watch has declared it as a ‘Best Choice’ sustainable species since it is incidental-catch, which allows for the octopus to be utilized rather than wasted.
We like it paired with a fine whiskey, or dressed with olive oil and lemon for an amazingly smoky Pulpo a la Gallega. Like many of our offerings, we recommend first enjoying straight from the can, but then please let your curiosity get the better of you. A giant clam with a mild flavor, firm texture, and appetizing golden color. Dry-cured with salt, sugar, and spices before smoking. We call it clam bacon.
This giant, rare clam is wild-harvested by hand from the seafloors neighboring our home on Prince of Wales Island, but due to a lack of domestic market demand, nearly all of the harvest is shipped live overseas. We hope to change that, and thanks to strong relationships with our local diving fleet—and adventurous eaters like you!—we've been able to create and help nurture a new market here at home for nature's most curious clam.

White clams are fished in Galician estuaries during October, November, and December. It´s called “The Queen” because of its texture and flavor.
This is Espinaler's "Premium Line" and these fantastic clams are mind blowing good!
Each family lays claim to a 100 square foot section of sand and seeds the area with baby clams. These nurseries, known as "bateas", are very valuable and respected.

Generally, I am a "Take them or leave them" person with regards to clams. If they are in a dish, I'll eat them, but I never add them to a dish, so I definitely would not seek them out.
These are incredible, life changing, clams. Are they a bit pricey? Yes so really just for a special occasion, but wow, it makes that occasion REALLY special!!
Conservas de Cambados is based in Galicia in Northeast Spain. This is the region of the Arousa Ría, which is well-known not just for its size, but also for the richness of its marine life. This area is particularly suitable for harvesting clams, cockles, mussels, and other bi-valves.
Conservas de Cambados takes great pride in selecting only the plumpest, tastiest clams. They hand harvest, then carefully cook, these clams in sea water. They are individually packed into the tin, and the tin is filled with fresh, pure, salt water. The end result is amazing.... the freshest clams you will ever have the pleasure of eating.

Razor clams (Navajas) are long, slender clams with a wonderfully rich flavor and firm texture. These perfectly cleaned clams are hand-harvested and then hand-packed in their own seawater. We eat them straight out of the can. You can also warm them in a skillet with garlic and extra virgin olive oil, or for some novelty we suggest you lightly grill them. You may also want to try adding a small squeeze of lemon, a drizzle of extra virgin olive oil, and some crusty bread.

The most wonderful small sardines in olive oil we have ever tasted come from the Estuaries of Galicia, Spain. This is a true Spanish food gem and we are very pleased to be able to offer it to you.
Rich in vitamins D and B12, they are also an excellent source of calcium and omega-3 fatty acids.
Do NOT be fooled by other sardines. Conservas de Cambados makes a "Gourmet" line, which is their highest quality, and the ONLY ones we sell. "Gourmet" is clearly at the top of the front label as shown in the photo, the "Conservas de Cambados" logo is prominently displayed, and the tin is rectangular with rounded corners. Their other line "Bogar/Alamar" is made with imported seafood (not from Spain) or with lower quality seafood from outside of Galicia.
When in doubt verify the front label says "Gourmet" at the top, "Made in Spain by CONSERVAS DE CAMBADOS, S.A. FDA 15066" at the bottom, shows the "Conservas de Cambados" logo, and it is in a rectangular tin with rounded corners.
