Scallop rillettes?? Aren't rillettes for duck, goose, pork, and other land animals? We thought so too, until Groix et Nature introduced us to their line of seafood rillettes!!

Rillettes are made by cubing delicate meats, salting them, and then slowly cooking them in fat until they are tender enough to be easily shredded. They are then cooled with a small amount of fat in order to form a paste which can then be spread on bread, toast, or crackers.
