Spanish Chorizo is a traditional salami made with pork, garlic, and smoked Spanish Paprika (pimentón). Palacios, out of Rioja, Spain is a master and was the first Spanish Chorizo to be approved for import to the USA. They started in 1960 with their family-owned butcher shop using a generations old family recipe, and now we celebrate with them as they share it with us and the world.
Spanish chorizo is dry-cured and ready to eat right out of the package!
While it does not hurt you to eat it, we recommend you take the skin off as it is a little chewy/tough. Wet a paper towel so that it's damp, then wrap it fairly tightly around the chorizo. Let it rest for twenty minutes or so. Then simply take a knife, cut off the ends, gently score the side lengthwise and peel it.
Also please note a white powdery mold is normal. While we rarely see it with this product, if you see some spots, do not worry. You can safely eat it, and it comes off if you peel the chorizo.
Make your own tapas board by slicing up some of this chorizo, adding some Spanish cheeses, olives, tinned seafood, and a crusty baguette!
We also love it in paella!

They're one of only a few chocolate makers who press their own cocoa butter. One of the many benefits of this time consuming process is that they're able to make this rich, incredibly flavorful hot cocoa mix from scratch.
Most hot cocoa is alkalized, which means it's washed with a solution of potassium carbonate. This allows the cocoa powder to dissolve in milk or water more easily, but significantly alters the flavor. Alkalizing also removes a significant amount of the natural flavanols, which are compounds that play a significant role in the beneficial effects of eating cacao.
This cocoa is NOT alkalized. You may need to stir a your hot cocoa a bit more vigorously but you'll taste the unique flavor of the beans, and get the full benefit of cacao's flavanols!
This single origin (Guatemala Asochivite) pure dark chocolate contains all of the tasty and healthy components of the cacao bean, unlike most hot cocoa mixes which have been processed to remove the cocoa butter. This keeps the chocolate in its purest form for a creamer texture and fuller flavor profile.
Add 1 cup milk to a small saucepan and bring to a slow simmer, and then add 3 Tablespoons Drinking Chocolate. Whisk vigorously until well combined and frothy. Pour into a mug and enjoy!

The wonderful people at Trampetti came through with their leccino/frantoio olive blend. They continue to meet the highest standards, as one would expect from Trampetti, and meet our goals as well.
The Trampetti farm is located in the prestigious Assisi-Spoleto hills of Umbria’s “gold coast” olive zone. There Massimo Sisani, third-generation descendant of Eugenio Trampetti, and Federico Bibi, Umbrian agricultural specialist, dedicate themselves to the production of one of the finest organic extra virgin olive oils in Italy.
