"Acquerello is the Rolls Royce of rice." - Alain Ducasse
"Acquerello is one of the very last authentic products." - Frédy Girardet
We are the only direct to consumer retailer of the 7 year aged Acquerello Carnaroli rice. All the rest of this rare and fabulous product goes straight to prestigious restaurants around the world!
One of the key points to perfection is the aging process. To age properly, the freshly harvested crop must be stored, as long as possible, in unique steel silos at a constant controlled temperature, because during this period the starch, combined with the oxygen, optimizes its culinary characteristics.
Acquerello is the rice grown, aged, whitened, and packed in Italy on the Colombara farm by the Rondolino family.
It is the ultimate rice: first the unhusked rough rice is aged to perfection for at least seven years, then it is whitened slowly using "The Helix" where grains rub gently one against the other, and finally it is restored with its most precious element, the embryo or germ. This re-enrichment of the refined rice with its germ restores the most valuable nutrients of brown rice.
Known as the "king" or the "caviar" of Italian rices, Carnaroli is the preferred risotto rice in most regions of Italy. Acquerello Carnaroli rice is classified as "Extra rice" for its quality. In order to preserve its characteristics perfectly, Acquerello rice is vacuum sealed in unique enameled tins.
Carnaroli rice keeps its shape better than other forms of rice during the slow cooking required for making risotto. For instance, Arborio rice is widely available, and sometimes suggested, for risotto. We are not fans of Arborio for risotto. Compared to Arborio, Carnaroli rice has a smaller grain size, and higher starch content. This means Carnaroli can absorb larger amounts of liquid, and thus flavor, from the wine and broth, without overcooking. So your risotto is more flavorful when you use Carnaroli rice. Also, the higher starch content in Carnaroli rice guarantees an ultra-creamy texture that is the hallmark of a superior risotto.
Acquerello's grains stay perfectly intact, absorb flavors exceptionally well, do not bind together, and do not lose starch, proteins, or vitamins. Therefore your risotto is fully consistent, tasty, creamy, and not sticky. Acquerello risotto will always be outstanding.
Acquerello is used in the finest restaurants around the world:
The Carnaroli rice cultivated at Colombara, being the only variety sown since 1997, is 100% pure and therefore produces uncontaminated Carnaroli seeds.
Once you have tried it, you will never look back!

New BIGGER Jar. We used to sell a 90 gram, now we have the 180 gram for less per ounce.
The Savini family business is world famous for their truffles. Starting in the 1920s, and continuing to this day, the family tradition of handcrafted truffle products has spanned over four generations.
During the harvest, the truffle gatherers collect both large and small truffles. The biggest ones are sold fresh to restaurants, while the smaller ones, with equally impressive flavor, are sliced, and through a very special proprietary method, preserved in olive oil. The flavor is identical to the fresh truffles, with the added benefit that you can keep them unopened in your kitchen for more than a year, and thus can have "fresh truffle flavor" anytime on a moment's notice.
These sliced black truffles are of the highest quality, and the Savini family ensures the origin of each and every truffle. This guarantees both the quality and freshness. Every jar shows a "best by" date so you know you are getting the freshest truffles available.
Ingredients: 50% Italian black truffle (Tuber aestivum Vitt.), olive oil, salt, truffle flavor, garlic, herbs, spice.
Shelf stable. Refrigerate after opening.

The Griottines® recipe uses the special Oblachinska Morello Cherry. This cherry is only grown in the Balkans, and is known for its unique taste. During harvest each cherry is hand-picked, leaving the stalk behind. A rigorous sort process selects the best cherries, and within 6 hours of harvesting the first maceration occurs. This artisanal process, and attention to detail, preserves the special flavor and physical properties of the cherries. The Morello cherries, and the liqueur, through natural osmosis, become something magical. Another sort process selects only the perfect cherries. The pit of each cherry is then carefully removed through the hole left by the missing stalk. The cherries look whole but do not have the pit. These depitted cherries are then macerated in different liqueurs for different time periods based on a secret, traditional recipe. They are delivered to you for maximum enjoyment!

The Savini family business is world famous for their truffles. Since the 1920s, the family tradition of handcrafted truffle products has passed down over four generations.
The truffles are individually selected by Luciano and Cristiano Savini. They are personally out with the truffle hunters in the heart of Tuscany so they can guarantee the highest quality and ensure the origin of each and every truffle. The production of truffle products, like this exceptional truffle butter, is then carried out using traditional methods and solely at the request of the importer. This guarantees both the freshness of the product and the 'shelf life'. Every jar shows a "best by" date so you know you are getting the freshest butter available. Large visible pieces of real truffle are in every jar.

Rich Breton lobster meat and Kari Gosse, a 19th century blend of curry spices that compliment seafood (including ginger, turmeric, cloves, pepper, and cinnamon), come together in this decadent recipe. Enjoy on a crusty baguette with a glass of champagne.
YES we were also concerned to see ginger, turmeric, cloves, pepper, and cinnamon, thinking they would overwhelm the lobster. After trying it, we were surprised, this is actually the most delicate of the Griox & Nature seafood rillettes! These spices may add some umami or similar feel, but they are not in the flavor profile.
Scallop rillettes?? Aren't rillettes for duck, goose, pork, and other land animals? We thought so too, until Groix et Nature introduced us to their line of seafood rillettes!!
This light and smooth spread, similar to pate, has a hint of sweetness, like all great scallops, while delivering the pure taste of fresh sea scallops. We love the inclusion of parsley, shallots, butter, and cream to create this rich delicacy.
It is great on a baguette as an easy appetizer, as a spread on sandwiches for lunch, with the addition of our capers and some lemon peel powder or fresh lemon zest, plus a grind of fresh black pepper.
One of the most popular products in the Groix & Nature collection, these rillettes will melt in the mouth and impress even the most particular gourmand.
These delicate and fragrant salmon rillettes are ideal on a warm blintz served with a green salad tossed in a light vinaigrette. We also simply spread them on a bagel for breakfast, baguette for lunch, or crackers for an easy snack.

The Castillo de Canena Estate has produced exceptional extra virgin olive oils in the Guadalquivir Valley of Andalusia in the south of Spain since 1780. This exceptional smoked oil is artisanally crafted by slowly infusing their high quality, hand-harvested, Castillo Arbequina Extra Virgin Olive Oil with naturally produced smoke from a mix of organic oak, beech, and birch woods. When you open the bottle you will smell, and taste, exquisitely smoked Arbequina. This unique oil is divine on its own, or you can pair it with your favorite recipes to add a smoky component to your dressings, marinades, and final dishes.
In order to produce this wonderful, exquisite, cutting-edge cold smoked extra virgin olive oil, Castillo de Canena designed a unique process. Their burner allows the wood chips to slowly smolder. The smoke is then cooled, and passed through a water filter. They then slowly, over the course of 6 hours, release the cold smoke into the bottom of the tank which holds the Arbequina Extra Virgin Olive Oil. This artisanal process naturally imparts the smoky flavor and aroma into the oil.

They only harvest their honey when it is fully mature: when flavor, color, aroma, and nutritional content reach their peak.
ADI focuses on organic honey which provides for a strict selection of wild flowers and plantations planted on pesticide-free areas, hives built with natural materials, and a process of honey extraction through centrifugation without adding sugar, additives, or food coloring; and they also never pasteurize thus preserving the pure, natural flavors you expect and demand.

Sea urchin is a gastronomic delicacy. Conservas de Cambados extracts, and cleans, the whole roe before gently placing it in the tin with its own pure sea water. It is often served plain so one can experience the delicate, natural, exquisite flavor and texture.
Since the waters are cool in Galicia these urchins grow slower, are smaller, and have a more concentrated flavor than the uni you are familiar with out of California. The flavor is more similar to Japan's Hokkaido region than California's Santa Barbara area.
Conservas de Cambados is based in Galicia in Northeast Spain. This is the region of the Arousa Ría, which is well-known not just for its size, but also for the richness of its marine life. This area is particularly suitable for harvesting clams, cockles, mussels, and other bi-valves.

The most wonderful small sardines in olive oil we have ever tasted come from the Estuaries of Galicia, Spain. This is a true Spanish food gem and we are very pleased to be able to offer it to you.
Rich in vitamins D and B12, they are also an excellent source of calcium and omega-3 fatty acids.

"Gourmet" is clearly at the top of the front label as shown in the photo, the "Conservas de Cambados" logo is prominently displayed, and the tin is rectangular with rounded corners. Their other line "Bogar/Alamar" is made with imported seafood (not from Spain) or with lower quality seafood from outside of Galicia.
When in doubt verify the front label says "Gourmet" at the top, "Made in Spain by CONSERVAS DE CAMBADOS, S.A. FDA 15066" at the bottom, shows the "Conservas de Cambados" logo, and it is in a rectangular tin with rounded corners.

We eat them straight out of the can. You can also warm them in a skillet with garlic and extra virgin olive oil, or for some novelty we suggest you lightly grill them. You may also want to try adding a small squeeze of lemon, a drizzle of extra virgin olive oil, and some crusty bread.

In the Mediterranean, squid ink is used in many recipes: Paella, risotto, black rice, soup, pasta, and of course Chipirones en su Tinta (squid in its own ink). It is also regularly included in seafood stews. In Italian cooking, it is used to prepare spaghetti al nero di seppia.
Squid ink contains numerous amino acids and polysaccharides, so in addition to being delicious in recipes, it is also known to have many health benefits including treating depression.

WuWanWo means "forget me not", an apt name for a product with unique origins and an unforgettable flavor. WuWanWo is a collaborative effort between Piranske Soline and Taiwanese soy sauce makers. They weave their centuries-old traditions together to create a soy sauce with a sweet, oceanic aroma, and meaty taste.
This precious sauce is produced using only indigenous black soybeans, Piranske Soline sea salt from the Piran Salt Pans in Slovenia (a very famous salt source), brown sugar, and natural seasonings. This soy sauce is produced with absolutely no preservatives and it uses all non-GMO ingredients. Its balanced yet complex flavor is achieved through a 180 day natural fermentation in traditional terra cotta pots. The sauce is simply extracted from the pots and bottled.
It is an excellent umami foundation for marinades and salad dressings, and it elevates sashimi, sushi, spring rolls, tempura, dumplings and other light dishes to new heights your taste buds have never imagined.
This "Harmonious" soy sauce is characterized by a balanced, meaty flavor. Try it with sashimi, sushi, spring rolls, tempura, or dumplings, in marinades and salad dressings, and other light dishes.
This was featured in "The Rosengarten Report" where he said:
"...it is extraordinary! Also made with non-GMO black soybeans, no wheat, and a 180-day fermentation, it is simply one of the most complex soy sauces I’ve ever tasted. The flavors are umami from not just Slovenia, but maybe even Mars (including an incredible blast of mushroom-like intensity). It’s very, very salty (as if to emphasize the Slovenian connection), but it finishes in the mouth with a lovely roundness. I love it for crudo: I buy me some very fresh fish, slice it sashimi-style, and gloss it lightly with Hei-Jin and extra virgin olive oil. Of course, feel free to use it in high-level Chinese and Japanese cooking as well.”
Note they have lowered the salt content a bit since that review, and now the labels say "light salt" in order to reflect the new formulation which is, to us, even better.

This white truffle extra virgin olive oil is both aromatic and finely balanced. Each bottle, using top quality extra virgin olive oil, contains actual pieces of white truffle (Tuber magnatum pico, found in northern and central Italy). Spectacular in casseroles, vegetable and potato dishes, soups, gravies, meat sauces/entrées.... this is truly a chef's companion. On hot pizza, and on popcorn, it's perfect!
No preservatives!!
Do not be fooled by other truffle oils that use grape seed, sunflower, safflower, or even "olive oil"... if they went cheap on the oil you know they went cheap on the truffle. Demand "extra virgin olive oil," the best. Plus those other "truffle oils" do NOT have actual pieces of truffle in them, another cost cutting step which gives their truffle oil a chemically taste. So they went cheap on the truffle too.
Only buy truffle oils, like this one, that use EXTRA VIRGIN OLIVE OIL and that have ACTUAL PIECES of REAL TRUFFLE in EVERY bottle. That way you are guaranteed to get real, pure truffle flavor. It is a difference you can taste!
This Casina Rossa extra virgin olive oil with black truffles (Tuber Aestivum which is the summer black truffle found in Europe) is aromatic yet subtle, extremely versatile, and great on risottos, pastas, pizzas, and popcorn! A real piece of truffle is in every bottle.

These are the only certified 100% Italian Pine Nuts in the USA. They even go through customs with their own certificate of authenticity.
To find these gems Ritrovo scoured Italy, eliminating from consideration any pine nuts that might be blended from Turkish or Greek sources, and completely shying away from the oilier, more rounded and petite, central Asian and Chinese nuts which can cause "pine mouth". They found a certified 100% Italian source of pine nuts, our great friends Nicola DeLaurentiis and his wife Paola at Casina Rossa. We are happy to be able to offer them to you. Enjoy!

It is the ultimate rice: first the unhusked rough rice is aged to perfection for at least one year, then it is whitened slowly using "The Helix" where grains rub gently one against the other, and finally it is restored with its most precious element, the embryo or germ. This re-enrichment of the refined rice with its germ restores the most valuable nutrients of brown rice.
The production of Bomba rice is limited as it is very delicate and hard to grow. Its size is equivalent to that of short grain rice, sometimes even smaller, yet Bomba rice more than doubles its size when it is cooked. Its main characteristics are its great capacity to absorb flavors and aromas, and that when cooked it is always “al dente”, loose, and whole; it is never sticky, mushy, or fluffy.
It is the preferred rice for paellas!

Saveur Magazine said Bonito tuna is "one of the great gastronomic pleasures of every day life."
The Bonito del Norte is the most valued member of the tuna family - highly appreciated for its white flesh, exquisite flavor, and delicate texture.
It is fished using traditional hook and line methods, thus preserving the wonderful texture and flavor which is often lost when fishing with nets. Only the best of the catch is selected to ensure exceptional taste, freshness, and quality. This dolphin-free tuna from the Basque region of Spain is then gently cleaned by hand.
This exceptional white meat tuna has the solid texture, and hearty flavor, of Bonito tuna which is very different from albacore. It is packed in high-quality Spanish olive oil for extra flavor, and is all natural, with no additives or preservatives.
We use it for tuna sandwiches, stuffing piquillo peppers, on salads, paired with grilled fennel, and on crackers for appetizers.
112 gram (3.95 ounce) oval tin
250 gram (8.81 ounce) round tin
The belly or "Ventresca" of the Bonito del Norte Tuna is the softest and most delicate part of the fish. It presents a much lighter and sweeter palate than the rest of the flesh of the fish, and is considered an exquisite delicacy.
Bonito del Norte is found in the coastal waters of the Bay of Biscay in the Basque region of Spain during the summer season when they come north to dine on the Cantabrian Anchovy. The Bonito del Norte is the most valued member of the tuna family, highly appreciated for its white flesh, exquisite flavor, and delicate texture. This Ortiz specialty is fished using artisanal fishing techniques with the philosophy that we must preserve our earth and its resources. Each tuna is individually line caught and not netted. They are fully dolphin safe.
Within 24 hours of being caught, the best belly fillets are selected, cooked in seawater, and then hand-packed in olive oil to keep them moist and flavorful.

For boning, the narrow, sharp, curved blade gets in close to the bone, making it easy to separate meat from bone. Even fibrous tissue is no match for Shun's extremely sharp edge. It's perfect for trimming the silver skin from a tenderloin or roast or even making your own cutlets. The narrow blade reduces the drag as you cut against the meat, so cutting is fast and easy. When it comes to filleting fish, the blade's six-inch length is just right to glide through the body of the fish, quickly removing bones and skin.
Also called a tomato knife or a sandwich knife, the Shun Classic 6-in. Serrated Utility Knife is a blade with many uses. In size, it's between the chef's knife and the paring knife, but its blade is narrower and straighter. The serrated edge makes it ideal for slicing foods with somewhat tough skins and soft interiors—such as avocados. It works well on sausages, especially those with tougher casing, and with hard cheeses. The Shun Classic Serrated Utility Knife is wonderful for a multitude of small tasks where more precise cuts are needed.
The Shun Classic line features beautiful Damascus-clad blades and D-shaped ebony PakkaWood® handles. Yet behind these handcrafted knives' beauty is function: razor-sharp blades offering top performance. Shun's proprietary high-performance VG-MAX steel, which provides incredible edge retention, is clad with Damascus stainless steel, then ground and bead-blasted, revealing the flowing pattern of the layered steel. The result is a line of knives that are sharp, durable, and corrosion resistant, as well as beautiful to behold. The Shun Classic line also offers you the widest assortment of both traditional culinary blade shapes and cutting-edge designs, so you can always find the right knife for the task.
In addition to their clad blades, The Shun Classics also feature the uniquely stable "D" shape handle design.
This stunningly beautiful line of classic cutlery features the look and benefits of Damascus steel, yet without its rusting problems. The Damascus-look blade profile reduces sticking and results in less damage to the food being cut and faster prep times.
