Smoky, briny and succulent, our smoked octopus is a special treat.
Monterey Bay Seafood Watch has declared it as a ‘Best Choice’ sustainable species since it is incidental-catch, which allows for the octopus to be utilized rather than wasted.
We like it paired with a fine whiskey, or dressed with olive oil and lemon for an amazingly smoky Pulpo a la Gallega. Like many of our offerings, we recommend first enjoying straight from the can, but then please let your curiosity get the better of you. Get started with some of our favorite Galley inspirations, from the sinful Octo-Mayo with Nori Fries, to a playful spin on Osaka's favorite street food Smoked Octopus Takoyaki, to a light and bright Farro Salad.

Saveur Magazine said Bonito tuna is "one of the great gastronomic pleasures of every day life."
The belly or "Ventresca" of the Bonito del Norte Tuna is the softest and most delicate part of the fish. It presents a much lighter and sweeter palate than the rest of the flesh of the fish, and is considered an exquisite delicacy.
Bonito del Norte is found in the coastal waters of the Bay of Biscay in the Basque region of Spain during the summer season when they come north to dine on the Cantabrian Anchovy. The Bonito del Norte is the most valued member of the tuna family, highly appreciated for its white flesh, exquisite flavor, and delicate texture. This specialty is fished using artisanal fishing techniques with the philosophy that we must preserve our earth and its resources. Each tuna is individually line caught and not netted. They are fully dolphin safe.
Within 24 hours of being caught, the best belly fillets are selected, cooked in seawater, and then hand-packed in olive oil to keep them moist and flavorful.

The “gateway chocolate” for non-believers. This chocolate is made with organic cacao from Bertil Akesson’s farm in the Sambirano Valley in Northern Madagascar, a region known for producing cacao rich with notes of citrus.
What's the difference between "drinking chocolate" and "hot cocoa"? Drinking chocolate is made from pure dark chocolate, containing all of the tasty and healthy components of the cacao bean, unlike most hot cocoa mixes which have been processed to remove the cocoa butter. Drinking chocolate keeps the chocolate in its purest form for a creamer texture and fuller flavor profile.
Add 1.25 cups milk to a small saucepan, and then add 4 Tablespoons Drinking Chocolate. Bring to a low simmer. Whisk vigorously until well combined and frothy. Pour into a mug and enjoy!
DO NOT BOIL THE MILK, that will be too hot and you will lose the nuances of the chocolate. Chocolate melts around 100F, so get your milk around 130-150F, which will be hot enough to melt it, and hot enough that you are having "hot chocolate," but not so hot that you will ruin the beautiful chocolate flavors.
May contain traces of peanuts, tree nuts, wheat
Ingredients: organic chocolate, organic cane sugar

This wonderful chocolate, spicy, and slightly savory bitter was specifically designed to compliment tequila and mezcal cocktails, but also tastes great with bitter orange Campari cocktails!
It can bring flavor as a cocktail or culinary partner, bringing the kitchen to the bar and the bar to the kitchen.
We love it in this cocktail: 3 ounces Del Maguey Vida Mezcal, 3 ounces grapefruit juice, 1 ounce lime juice, 1 ounce Orgeat, several dashes Mole Bitters. Served on the rocks. For a bit more spice, infuse the Mezcal with your favorite chile pepper such as jalapeno or our favorite, chipotle. You can also dust the rim of your glass, we tried Tajin, and separately chipotle, with great success!!
One great thing about bitters is that they are great flavorings for sparkling water when you want a non-alcoholic, tasty beverage!
Two ounces can make between 50 and 80 cocktails, so a little goes a long way and the bottle should last months and months and months.
Made in the USA
A 50 milliliter (1.7 ounce) bottle.
Their signature product, Dashfire Vintage Orange Bitters is Minnesota's first (and only) barrel-aged bitters. Fresh orange rind is combined with quality bourbon and select spices, and then aged in a Minnesota-made white oak barrel to incorporate the flavor and sugars of the oak. Perfect for the classic cocktails like Old Fashioneds and Manhattans.
Ingredients: bourbon, water, fresh orange rind, spices, angelica root
These are best in spirit-forward cocktails of almost any kind ranging from the Old Fashioned (you pick the spirit, it will sing) to any aperitif/digestif you can imagine.
The predominant ingredient in these rippin’ bitters extracted from house distilled rye (Willamette, grown by Camas) and red corn (Oaxaca, grown by Masienda) is Newtown Pippin cider apples from 5 Mile Orchard, organically grown 50 miles from the distillery. With the help of their friends, they crushed tons of apples, naturally fermented them into cider and then they blended the cider with a high proof maceration of Cloud Forest Yellow Cardamom, Royal Cinnamon, Ea Sar Peppercorn, Pemba Clove, Eleuthero, Suma, and Gentian.
Super different from any other Apple Bitters on the market: the flavor profile is not based on sweet baking spice/apple pie. Instead, the focus is on exemplifying the flavor profile of this cider apple.
3.3 ounces can make between 80 and 130 cocktails, so a little goes a long way and the bottle should last months and months and months.
This is released once a year, we were lucky to get 24.Grab them while you can!

If you’re one of the many cooks who prefer a larger chef’s knife, the Shun Premier 10-inch Chef's Knife would be an excellent choice for you. Because of Premier’s thinner, lighter blades, you'll find that this larger chef’s knife handles just as easily as a smaller one, while still providing the longer cutting edge you want. Professional chefs often choose a longer blade length in order to handle an increased volume of product and improve efficiency in the kitchen. The Shun Premier 10-in. Chef’s Knife handles everything from small to large foods. The wide blade helps keep knuckles off the cutting board and is very handy when transferring cut food from board to pan. The curved belly makes rocking cuts easy, too.
The Shun Premier Chef’s Knife is part of the beautiful Shun Premier line, which calls to mind the hand-forged knives of ancient Japan. While each knife still takes at least 100 handcrafted steps to complete, the materials Shun uses are among the most advanced in the industry. Each blade has a cutting core of Shun's proprietary VG-MAX “super steel” to take and hold a precision edge. The layered Damascus cladding supports the core and provides additional stain resistance. Near the edge of the blade, where the steels meet, an undulating line is formed—similar to the hamon formed when samurai swords are tempered using a traditional clay-baking technique. The hammered tsuchime finish acts like a series of hollow-ground cavities to reduce drag. The handles nestle comfortably in the hand, while the embossed end cap adds balance and beauty.

Our apologies but Shun does not allow us to offer coupons or additional discounts on their products.
The Shun has added a rigid boning/fillet knife to the Premier series. As you would expect, this beautiful knife is the right tool for two key kitchen chores—boning and filleting. When boning, the narrow, sharp, curved blade gets in close to the bone, making it easy to separate meat from bone. Shun's extremely sharp edge even cuts through fibrous material with ease. It’s perfect for trimming the silver skin from a tenderloin or roast or even making your own cutlets. The narrow blade reduces the drag as you cut against the meat, so cutting is fast and easy. When it comes to filleting fish, the blade's six-inch length is just right to glide through the body of the fish, quickly removing bones and skin. The contoured Premier handle provides a secure grip for excellent control.
For boning, the narrow, sharp, curved blade gets in close to the bone, making it easy to separate meat from bone. Even fibrous tissue is no match for Shun's extremely sharp edge. It's perfect for trimming the silver skin from a tenderloin or roast or even making your own cutlets. The narrow blade reduces the drag as you cut against the meat, so cutting is fast and easy. When it comes to filleting fish, the blade's six-inch length is just right to glide through the body of the fish, quickly removing bones and skin.
The Shun Classic Brisket Knife is the perfect tool for a barbeque or family feast. It's ideal for trimming and slicing larger cuts of meat, including brisket, ham, turkey, and roasts. The Shun Classic Brisket Knife's long, narrow blade makes it easy to cut slices in a single pass to ensure more of the juices—and flavor—stay inside the meat. The long, razor-sharp blade means slices will look perfect since there's no need to saw back and forth. Hollow-ground indentations on the blade help food release more easily and the rounded tip makes the knife safer and easier to use. The included wooden saya, or sheath, protects the blade and makes it simple to transport to a barbeque or celebration taking place away from home.
In addition to their clad blades, The Shun Classics also feature the uniquely stable "D" shape handle design.
This stunningly beautiful line of classic cutlery features the look and benefits of Damascus steel, yet without its rusting problems. The Damascus-look blade profile reduces sticking and results in less damage to the food being cut and faster prep times.

ABS plastic is the same plastic they use for Lego Toys, motorcycle helmets, and golf clubs. It has high tensile strength and is very resistant to physical impacts and chemical corrosion. This allows the finished plastic handles to withstand heavy use without showing signs of wear and tear.
These mineral colored steak knives add a subtle splash of color to the table. The color isn't over bearing, and provides just the right amount of pizazz to your dining room.
Classy, with the right amount of "Rustic feel"
These are the only certified 100% Italian Pine Nuts in the USA. They even go through customs with their own certificate of authenticity.
To find these gems Ritrovo scoured Italy, eliminating from consideration any pine nuts that might be blended from Turkish or Greek sources, and completely shying away from the oilier, more rounded and petite, central Asian and Chinese nuts which can cause "pine mouth". They found a certified 100% Italian source of pine nuts, our great friends Nicola DeLaurentiis and his wife Paola at Casina Rossa. We are happy to be able to offer them to you. Enjoy!

From their home base in the Abruzzo Region of Italy the Iacovanelli family, ADI’s owners, care for their bees with strictly organic techniques that blend solid traditions with contemporary innovation. They only harvest their honey when it is fully mature: when flavor, color, aroma, and nutritional content reach their peak.
This traditional, pale amber, and slightly chewy, Mediterranean honey has an intense and savory aromatic profile, and a full-bodied sweetness with a strong piney aroma and herbaceous flavor. Excellent as a glaze for roasted chicken or pork, for baking - especially in olive oil cakes, and on whole grain toast.

This Cherry Blossom Honey is a pale, opaque, and creamy honey with a complex sweetness. We think it is excellent with smoky or sheep’s milk cheeses, Japanese green teas, and pastries.

This white truffle extra virgin olive oil is both aromatic and finely balanced. Each bottle, using top quality extra virgin olive oil, contains actual pieces of white truffle (Tuber magnatum pico, found in northern and central Italy). Spectacular in casseroles, vegetable and potato dishes, soups, gravies, meat sauces/entrées.... this is truly a chef's companion. On hot pizza, and on popcorn, it's perfect!
No preservatives!!
Do not be fooled by other truffle oils that use grape seed, sunflower, safflower, or even "olive oil"... if they went cheap on the oil you know they went cheap on the truffle. Demand "extra virgin olive oil," the best. Plus those other "truffle oils" do NOT have actual pieces of truffle in them, another cost cutting step which gives their truffle oil a chemically taste. So they went cheap on the truffle too.
Only buy truffle oils, like this one, that use EXTRA VIRGIN OLIVE OIL and that have ACTUAL PIECES of REAL TRUFFLE in EVERY bottle. That way you are guaranteed to get real, pure truffle flavor. It is a difference you can taste!

Tenuta Sant’Ilario is a farm located between the sea and the mountains, and stands on a green hill overlooking the sea. It was founded in 1982 and, although it has grown in technology and manufacturing, it has always remained a small, family run business.
Tortiglione is an ancient heirloom olive variety that is widespread in the areas of Teramo and part of Pescara. The name “tortiglione”, or twisted, comes from its clockwise tortile trunk of the olive trees. The tortiglione olive is not suited to mechanical harvesting, it bruises and tears easily, so it is always harvested by hand. The variety is recognized as Biennial bearing, and thus may not be made in every year. Tortiglione olives are late ripening, providing an oil rich in polyphenols (antioxidants), which indicates high quality. This varietal typically has a spicy flavor profile.
This extra virgin olive oil is 100% Tortiglione.

J. Leblanc has changed little since 1878, the year it was founded. It is still run by a Leblanc, Jean-Charles, grandson of the founder. It is still located in the southern most village of Burgundy, Iguerande, and it still manufactures the highest quality, small-batch, handcrafted nut oils in France.... if not the world.
J. Leblanc starts with the careful selection of the absolute highest quality whole nuts available, grown on many of the same farms that J. Leblanc has been doing business with for generations. For each batch of oil about fifty-four pounds of nuts are ground into a paste using the huilerie's original granite mill. In order to guarantee an even roast, this paste is constantly stirred in a roaster for 10 minutes. The roasted paste is then transferred to a mechanical press where it is divided in half and separated with filter cloth. The oil is expressed at 22,000 pounds of mechanical pressure. After pressing, the oil rests from seven-to-fourteen days to allow the sediment to settle before bottling. This is a labor, and time, intensive process which produces only 300 liters a day. These nut oils are pure, unadulterated, unfiltered, and unrefined.
J. Leblanc nut oils are made to order.
One of the most important facts about Huilerie Leblanc's production is not the "how" but the "when". Since Huilerie Leblanc does not have large storage facilities, or refining capabilities, production takes place when orders come in - guaranteeing the freshest nut oils delivered to your door. It's not only a difference you can taste - in their clean, bright, and deep flavors, but also extends their longevity by up to a year.
In the United States, J. Leblanc is finding its way to renowned restaurants like The French Laundry, Mandalay Bay, Delfina, Campanelli, One Market, 231 Ellis, and Hawthorn Lane to name a few!

My life just changed!!
Generally, I am a "Take them or leave them" person with regards to clams. If they are in a dish, I'll eat them, but I never add them to a dish, so I definitely would not seek them out.
These are incredible, life changing, clams. Are they a bit pricey? Yes so really just for a special occasion, but wow, it makes that occasion REALLY special!!
Conservas de Cambados is based in Galicia in Northeast Spain. This is the region of the Arousa Ría, which is well-known not just for its size, but also for the richness of its marine life. This area is particularly suitable for harvesting clams, cockles, mussels, and other bi-valves.
Each family lays claim to a 100 square foot section of sand and seeds the area with baby clams. These nurseries, known as "bateas", are very valuable and respected.
Conservas de Cambados takes great pride in selecting only the plumpest, tastiest clams. They hand harvest, then carefully cook, these clams in sea water. They are individually packed into the tin, and the tin is filled with fresh, pure, salt water. The end result is amazing.... the freshest clams you will ever have the pleasure of eating.

Razor clams (Navajas) are long, slender clams with a wonderfully rich flavor and firm texture. These perfectly cleaned clams are hand-harvested and then hand-packed in their own seawater. We eat them straight out of the can. You can also warm them in a skillet with garlic and extra virgin olive oil, or for some novelty we suggest you lightly grill them. You may also want to try adding a small squeeze of lemon, a drizzle of extra virgin olive oil, and some crusty bread.

In Japan, the kiritsuke is known as the master chef's knife. Use it for all the tasks for which you'd use a chef's knife. It works extremely well with vegetables; julienne, dice, or brunoise with ease. It's also an excellent choice for cleaning and portioning boneless proteins, and particularly fish. It slices cooked proteins with grace and ease. With its straighter edge, it's ideal for slicing cuts and push cuts. Once you try it, you'll find yourself reaching for your Shun Dual Core Kiritsuke more and more often.
About the Shun Dual Core series: Until now, it was considered almost impossible to create layered Damascus from two premium-quality stainless steels. But what was impossible is now a reality—and Shun is proud to bring it to your kitchen. The Shun Dual Core series features a Damascus blade made from two premium-quality, high-carbon stainless steels. Seventy-one alternating micro layers of high carbon, high chromium VG10 and VG2 stainless steels are roll-forged to produce a finer grain in the steel and to give it both strength and beauty. The laminated steel is then hot forged to create the herringbone pattern that allows the layers to alternate along the cutting edge. During normal use, the two steels will wear at different rates creating micro serrations along the edge so that the Dual Core’s extremely sharp edge feels sharp longer. Etched laminations in the blade reduce drag, helping food release from the blade and gliding through each cut quickly and easily. Dual Core blades are thin, light, and strong. Traditional Japanese octagon-shaped handles in ebony PakkaWood provide a comfortable and secure grip to complete the look of these beautiful knives.
Includes traditional Japanese wooden saya, or sheath.

Rich smokehouse flavor, brilliant red flesh. The essence of wild Alaska, in one bite.
Sockeye’s brilliant red flesh is the star of the plate, the platter, or your favorite charcuterie board. Eat like the locals do, very simply, on a bed of steamed rice, or mix with mayonnaise and spread on whole-wheat bread for a simple yet filling lunch. Add it to seafood soups and chowders, or a breakfast frittata.
Unlike most smoked salmon being sold, which is cross-cut steaks, bones, spine, and everything else, Wildfish is different, special, in that they are smoking hand-trimmed fillets. This extra attention to detail, this extra time and care, shines through in the final taste and texture. You won't find a better smoked salmon anywhere in the world.
Harvested and hand-packed in Alaska
A giant clam with a mild flavor, firm texture, and appetizing golden color. Dry-cured with salt, sugar, and spices before smoking. We call it clam bacon.
This giant, rare clam is wild-harvested by hand from the seafloors neighboring our home on Prince of Wales Island, but due to a lack of domestic market demand, nearly all of the harvest is shipped live overseas. We hope to change that, and thanks to strong relationships with our local diving fleet—and adventurous eaters like you!—we've been able to create and help nurture a new market here at home for nature's most curious clam.
Smoked herring delivers robust, savory flavor with a rich dose of umami and smoke. Herring is a smaller fish, and after smoking over Alderwood, the skin turns slightly crisp, and the flesh transforms into a rich mahogany brown. The result is a tin of tempting bite-sized morsels that look beautiful right out of the tin or in a pasta dish.
We source our herring from the pure, remote waters of Western Alaska where the fishery is managed sustainably and provides economic support for residents of the remote village of Togiak, Alaska (population 857).
White clams are fished in Galician estuaries during October, November, and December. It´s called “The Queen” because of its texture and flavor.

Rich Breton lobster meat and Kari Gosse, a 19th century blend of curry spices that compliment seafood (including ginger, turmeric, cloves, pepper, and cinnamon), come together in this decadent recipe. Enjoy on a crusty baguette with a glass of champagne.
YES we were also concerned to see ginger, turmeric, cloves, pepper, and cinnamon, thinking they would overwhelm the lobster. After trying it, we were surprised, this is actually the most delicate of the Griox & Nature seafood rillettes! These spices may add some umami or similar feel, but they are not in the flavor profile.
Keep this in your pantry for a quick easy snack or appetizer for unannounced guests.

Rillettes are made by cubing delicate meats, salting them, and then slowly cooking them in fat until they are tender enough to be easily shredded. They are then cooled with a small amount of fat in order to form a paste which can then be spread on bread, toast, or crackers.

The Savini family business is world famous for their truffles. Starting in the 1920s, and continuing to this day, the family tradition of handcrafted truffle products has spanned over four generations.
During the harvest, the truffle gatherers collect both large and small truffles. The biggest ones are sold fresh to restaurants, while the smaller ones, with equally impressive flavor, are sliced, and through a very special proprietary method, preserved in olive oil. The flavor is identical to the fresh truffles, with the added benefit that you can keep them unopened in your kitchen for more than a year, and thus can have "fresh truffle flavor" anytime on a moment's notice.
These sliced black truffles are of the highest quality, and the Savini family ensures the origin of each and every truffle. This guarantees both the quality and freshness. Every jar shows a "best by" date so you know you are getting the freshest truffles available.
Ingredients: 50% Italian black truffle (Tuber aestivum Vitt.), olive oil, salt, truffle flavor, garlic, herbs, spice.
These candied Taggascia olives are perfectly balanced, not too sweet, not too salty. This savory-sweet combination makes them perfect snacking olives, great for an antipasti platter, and we love them in cocktails and savory pastas.

These cubes of candied orange are made from fragrant bitter-sweet Sicilian oranges. They will bring a lovely orange flavor to crepes, breads, cookies, cheesecake, panettone, ice cream, gelato, and chocolate tarts.
In baking we simply add these directly into the batter or dough.
These cubes of candied lemon are made from Sicilian lemons which have a lovely, bright flavor. The sharpness normally associated with lemons is softened by the sugar syrup while retaining the freshness. These candied lemon cubes are great in homemade ice cream, gelato, baking (fruit cakes, cup cakes, chocolate desserts, panettone), and cocktails.
Ingredients: lemon peels (60%), sugar, glucose syrup.
Strawberry tarts are brought to the next level when using these wild, semi-candied whole strawberries. The natural flavors are perfectly preserved by Pariani’s cold candying process which also prevents the fruit from freezing at cold temperatures so the strawberries stay soft even when mixed with your favorite ice cream.
We also love them spooned over yogurt, folded through whipped cream, in crepes, strawberry cheesecake, and when making a strawberry fool.
Ingredients: strawberry (60%), sugar, glucose syrup.
Pariani candied Cantiano Black Cherries are the perfect dessert topping for cherry lovers. The key to enjoying an extraordinarily delicious steak is keeping more of the flavorful juices where they belong—inside the steak.
Of course, you'll let the steaks "rest" once you've removed them from the heat. But there's something else you can do to ensure your steaks are the very best they can be. You can use a razor-sharp steak knife. The knives in this set of Shun Classic Steak Knives are hand-sharpened to a 16° edge on each side. They glide through your steak, cutting fewer of the capillaries in the meat and thus keeping more of the juices inside. You will be astonished at what a difference these fine-edged steak knives can make in the flavor and enjoyment of your steaks.
This Shun Classic Blonde Set includes four beautiful steak knives, perfect for a small dinner party. They come in an elegant box, suitable for gift-giving or storage.

Your chef’s knife will probably be the most-used knife in your kitchen. If you’re like most cooks, you’ll want to find the one that feels like an extension of your arm. The beautiful Shun Premier 6-inch Chef's Knife could be the one for you. This breathtaking knife is lightweight, agile, and offers an extremely comfortable grip. In fact, Shun Premier's thinner blades makes this chef’s knife lighter and less tiring to use than comparable European-style chef's knives. The eight-inch length and razor-sharp edge are perfect for slicing, dicing, and chopping a full range of fruits, vegetables, and other foods. The wide blade keeps knuckles off the cutting board and comes in extra handy when transferring cut food from board to pan. With its curved belly, the Chef's knife can be gently rocked through fresh herbs or spices to produce a very fine mince.

If you bake or buy whole loaves of bread, a bread knife will be one of the most-used knives in your kitchen. Whether you love wonderfully crusty or delicately tender bread, the Shun Premier Bread Knife will be your loaf's new best friend, no matter what its texture. The key is Shun’s razor-sharp, wide, “low frequency” serrations. Unlike a plain-edged knife, the serrations let you gently saw through the bread without crushing and with much less crumbing. Unlike sawtooth serrations that are spaced closer together, the Shun Premier Bread Knife’s wide serrations will gently glide through the bread without tearing. This keeps the bread’s texture intact and enhances eating pleasure. Cakes and pastries also benefit from the Shun Premier Bread Knife’s smooth cutting capabilities.
The Shun Premier Slicing Knife is part of the beautiful Shun Premier line, which calls to mind the hand-forged knives of ancient Japan.
