Saveur Magazine said Bonito tuna is "one of the great gastronomic pleasures of every day life."
The belly or "Ventresca" of the Bonito del Norte Tuna is the softest and most delicate part of the fish. It presents a much lighter and sweeter palate than the rest of the flesh of the fish, and is considered an exquisite delicacy.
Bonito del Norte is found in the coastal waters of the Bay of Biscay in the Basque region of Spain during the summer season when they come north to dine on the Cantabrian Anchovy. The Bonito del Norte is the most valued member of the tuna family, highly appreciated for its white flesh, exquisite flavor, and delicate texture. This specialty is fished using artisanal fishing techniques with the philosophy that we must preserve our earth and its resources. Each tuna is individually line caught and not netted. They are fully dolphin safe.
Within 24 hours of being caught, the best belly fillets are selected, cooked in seawater, and then hand-packed in olive oil to keep them moist and flavorful.
We use it for:

From their home base in the Abruzzo Region of Italy the Iacovanelli family, ADI’s owners, care for their bees with strictly organic techniques that blend solid traditions with contemporary innovation. They only harvest their honey when it is fully mature: when flavor, color, aroma, and nutritional content reach their peak.
This Cherry Blossom Honey is a pale, opaque, and creamy honey with a complex sweetness. We think it is excellent with smoky or sheep’s milk cheeses, Japanese green teas, and pastries.

The Bonito del Norte is the most valued member of the tuna family - highly appreciated for its white flesh, exquisite flavor, and delicate texture.
It is fished using traditional hook and line methods, thus preserving the wonderful texture and flavor which is often lost when fishing with nets. Only the best of the catch is selected to ensure exceptional taste, freshness, and quality. This dolphin-free tuna from the Basque region of Spain is then gently cleaned by hand.
This exceptional white meat tuna has the solid texture, and hearty flavor, of Bonito tuna which is very different from albacore. It is packed in high-quality Spanish olive oil for extra flavor, and is all natural, with no additives or preservatives.

These exquisite anchovies, packed in the finest Spanish olive oil, are hand-packed according to traditional methods using carefully selected fresh fish harvested off the Cantabrian Coast in northern Spain.
The anchovy, a traditional food of the Basque Country, is a mainstay of this region's fishing economy. The Spanish name "boqueron" comes from the size of the anchovy's mouth or boca, which is large in proportion to the rest of the body. Anchovies are typically harvested in the spring when they accumulate the most fat and flavor. Small nets are used to protect the quality of the fish and reduce by-catch. Once caught they are gutted, placed in barrels with salt-layer separations, and weighted. Once the fish have matured, a minimum of 6 months, they are washed to remove the bones and skin, and then canned in high quality olive oil.
Anchovies are high in Omega-3 fatty acids which reduce cholesterol and help in the prevention of cardio-vascular disease. They are also rich in iodine, calcium, Vitamins A, D, B12, B6, B2, and unsaturated fatty acids such as linoleic acid.
Ingredients: Anchovies, olive oil, salt.

The Shun Premier Chef’s Knife is part of the beautiful Shun Premier line, which calls to mind the hand-forged knives of ancient Japan. While each knife still takes at least 100 handcrafted steps to complete, the materials Shun uses are among the most advanced in the industry. Each blade has a cutting core of Shun's proprietary VG-MAX “super steel” to take and hold a precision edge. The layered Damascus cladding supports the core and provides additional stain resistance. Near the edge of the blade, where the steels meet, an undulating line is formed—similar to the hamon formed when samurai swords are tempered using a traditional clay-baking technique. The hammered tsuchime finish acts like a series of hollow-ground cavities to reduce drag. The handles nestle comfortably in the hand, while the embossed end cap adds balance and beauty.

The key to enjoying an extraordinarily delicious steak is keeping more of the flavorful juices where they belong—inside the steak.
Of course, you'll let the steaks "rest" once you've removed them from the heat. But there's something else you can do to ensure your steaks are the very best they can be. You can use a razor-sharp steak knife. The knives in this set of Shun Classic Steak Knives are hand-sharpened to a 16° edge on each side. They glide through your steak, cutting fewer of the capillaries in the meat and thus keeping more of the juices inside. You will be astonished at what a difference these fine-edged steak knives can make in the flavor and enjoyment of your steaks.
This Shun Classic set includes four beautiful steak knives, perfect for a small dinner party. They come in an elegant box, suitable for gift-giving or storage.

The Shun Classic Brisket Knife is the perfect tool for a barbeque or family feast. It's ideal for trimming and slicing larger cuts of meat, including brisket, ham, turkey, and roasts. The Shun Classic Brisket Knife's long, narrow blade makes it easy to cut slices in a single pass to ensure more of the juices—and flavor—stay inside the meat. The long, razor-sharp blade means slices will look perfect since there's no need to saw back and forth. Hollow-ground indentations on the blade help food release more easily and the rounded tip makes the knife safer and easier to use. The included wooden saya, or sheath, protects the blade and makes it simple to transport to a barbeque or celebration taking place away from home.

For boning, the narrow, sharp, curved blade gets in close to the bone, making it easy to separate meat from bone. Even fibrous tissue is no match for Shun's extremely sharp edge. It's perfect for trimming the silver skin from a tenderloin or roast or even making your own cutlets. The narrow blade reduces the drag as you cut against the meat, so cutting is fast and easy. When it comes to filleting fish, the blade's six-inch length is just right to glide through the body of the fish, quickly removing bones and skin.
Also called a tomato knife or a sandwich knife, the Shun Classic 6-in. Serrated Utility Knife is a blade with many uses. In size, it's between the chef's knife and the paring knife, but its blade is narrower and straighter. The serrated edge makes it ideal for slicing foods with somewhat tough skins and soft interiors—such as avocados. It works well on sausages, especially those with tougher casing, and with hard cheeses. The Shun Classic Serrated Utility Knife is wonderful for a multitude of small tasks where more precise cuts are needed.
With each use of your knife, the razor-sharp edge naturally bends over just a tiny bit. The edge is still sharp, but the sharpest part isn’t making contact with the food. The answer is honing with the Shun Classic Combination Honing Steel. It gently realigns the edge of the blade, prolonging the knife's sharpness. The Shun Classic Combination Honing Steel has two surfaces: a smooth one for day-to-day honing, and a micro-ribbed one for weekly honing.
While fine European knives can require honing after each use, Shun's harder steel means you can hone just once a week or so, depending on your level of use. To make honing to the correct 16° Shun angle easier, the Shun Classic Combination Honing Steel has a built-in 16° angle on the handle. The premium PakkaWood® handle provides a secure grip and matches the handles of the rest of the beautiful Shun Classic line.

If you bake or buy whole loaves of bread, a bread knife will be one of the most-used knives in your kitchen. Whether you love wonderfully crusty or delicately tender bread, the Shun Premier Bread Knife will be your loaf's new best friend, no matter what its texture. The key is Shun’s razor-sharp, wide, “low frequency” serrations. Unlike a plain-edged knife, the serrations let you gently saw through the bread without crushing and with much less crumbing. Unlike sawtooth serrations that are spaced closer together, the Shun Premier Bread Knife’s wide serrations will gently glide through the bread without tearing. This keeps the bread’s texture intact and enhances eating pleasure. Cakes and pastries also benefit from the Shun Premier Bread Knife’s smooth cutting capabilities.

If you’re one of the many cooks who prefer a larger chef’s knife, the Shun Premier 10-inch Chef's Knife would be an excellent choice for you. Because of Premier’s thinner, lighter blades, you'll find that this larger chef’s knife handles just as easily as a smaller one, while still providing the longer cutting edge you want. Professional chefs often choose a longer blade length in order to handle an increased volume of product and improve efficiency in the kitchen. The Shun Premier 10-in. Chef’s Knife handles everything from small to large foods. The wide blade helps keep knuckles off the cutting board and is very handy when transferring cut food from board to pan. The curved belly makes rocking cuts easy, too.
Your chef’s knife will probably be the most-used knife in your kitchen. If you’re like most cooks, you’ll want to find the one that feels like an extension of your arm. The beautiful Shun Premier 8-inch Chef's Knife could be the one for you. This breathtaking knife is lightweight, agile, and offers an extremely comfortable grip. In fact, Shun Premier's thinner blades makes this chef’s knife lighter and less tiring to use than comparable European-style chef's knives. The wide blade keeps knuckles off the cutting board and comes in extra handy when transferring cut food from board to pan. Once you try it, you'll find yourself reaching for your Shun Dual Core Kiritsuke more and more often.
About the Shun Dual Core series: Until now, it was considered almost impossible to create layered Damascus from two premium-quality stainless steels. But what was impossible is now a reality—and Shun is proud to bring it to your kitchen. The Shun Dual Core series features a Damascus blade made from two premium-quality, high-carbon stainless steels. Seventy-one alternating micro layers of high carbon, high chromium VG10 and VG2 stainless steels are roll-forged to produce a finer grain in the steel and to give it both strength and beauty. The laminated steel is then hot forged to create the herringbone pattern that allows the layers to alternate along the cutting edge. During normal use, the two steels will wear at different rates creating micro serrations along the edge so that the Dual Core’s extremely sharp edge feels sharp longer. Etched laminations in the blade reduce drag, helping food release from the blade and gliding through each cut quickly and easily. Dual Core blades are thin, light, and strong. Traditional Japanese octagon-shaped handles in ebony PakkaWood provide a comfortable and secure grip to complete the look of these beautiful knives.
Includes traditional Japanese wooden saya, or sheath.
