Acquerello is the rice grown, aged, whitened, and packed in Italy on the Colombara farm by the Rondolino family.
It is the ultimate rice: first the unhusked rough rice is aged to perfection for at least one year, then it is whitened slowly using "The Helix" where grains rub gently one against the other, and finally it is restored with its most precious element, the embryo or germ. This re-enrichment of the refined rice with its germ restores the most valuable nutrients of brown rice.
Known as the "king" or the "caviar" of Italian rices, Carnaroli is the preferred risotto rice in most regions of Italy. Acquerello Carnaroli rice is classified as "Extra rice" for its quality. In order to preserve its characteristics perfectly, Acquerello rice is vacuum sealed in unique enameled tins.
Carnaroli rice keeps its shape better than other forms of rice during the slow cooking required for making risotto. For instance, Arborio rice is widely available, and sometimes suggested, for risotto. We are not fans of Arborio for risotto. Compared to Arborio, Carnaroli rice has a smaller grain size, and higher starch content. This means Carnaroli can absorb larger amounts of liquid, and thus flavor, from the wine and broth, without overcooking. So your risotto is more flavorful when you use Carnaroli rice. Also, the higher starch content in Carnaroli rice guarantees an ultra-creamy texture that is the hallmark of a superior risotto.
Acquerello's grains stay perfectly intact, absorb flavors exceptionally well, do not bind together, and do not lose starch, proteins, or vitamins. Therefore your risotto is fully consistent, tasty, creamy, and not sticky. Acquerello risotto will always be outstanding.

Chestnut flour is a classic in the Ligurian Hills and is considered a defining product on the Mediterranean coast of Italy. Tenuta Sant’Ilario is a farm located between the sea and the mountains, and stands on a green hill overlooking the sea. It was founded in 1982 and, although it has grown in technology and manufacturing, it has always remained a small, family run business.
Tortiglione is an ancient heirloom olive variety that is widespread in the areas of Teramo and part of Pescara. The name “tortiglione”, or twisted, comes from its clockwise tortile trunk of the olive trees. The tortiglione olive is not suited to mechanical harvesting, it bruises and tears easily, so it is always harvested by hand. The variety is recognized as Biennial bearing, and thus may not be made in every year. Tortiglione olives are late ripening, providing an oil rich in polyphenols (antioxidants), which indicates high quality. This varietal typically has a spicy flavor profile.
This extra virgin olive oil is 100% Tortiglione.

These cubes of candied lemon are made from Sicilian lemons which have a lovely, bright flavor. The sharpness normally associated with lemons is softened by the sugar syrup while retaining the freshness. These candied lemon cubes are great in homemade ice cream, gelato, baking (fruit cakes, cup cakes, chocolate desserts, panettone), and cocktails.
Ingredients: lemon peels (60%), sugar, glucose syrup.
These cubes of candied orange are made from fragrant bitter-sweet Sicilian oranges. They will bring a lovely orange flavor to crepes, breads, cookies, cheesecake, panettone, ice cream, gelato, and chocolate tarts.
In baking we simply add these directly into the batter or dough.
These candied Taggascia olives are perfectly balanced, not too sweet, not too salty. This savory-sweet combination makes them perfect snacking olives, great for an antipasti platter, and we love them in cocktails and savory pastas.
