The annual tasting of freshly pressed olive oil is a generations old tradition in Italy. Green olives are harvested, and pressed just in time for the holiday season. Unlike other olive oils, these Novello (meaning new or fresh in Southern Italy; in Northern Italy they use the term Nuovo) extra virgin olive oils do not spend any time in the settling tank which yields a zesty olive oil. The Fois family’s 100+ years of experience and its tireless passion for the prized fruit of the olive tree ensure a unique, unmistakable extra virgin olive oil.
