King Salmon is the largest of the Pacific salmon species (they can reach over 100 pounds!) and the highest in fat, including anti-inflammatory Omega-3's. It's often considered the most delicious and is prized for its thick, moist and buttery smooth texture, which makes it a total treat.
While all that separates a white King Salmon from the red King Salmon is its inability to process pigments, its rarity sets it apart. When you want something extra special, this is it.

This giant, rare clam is wild-harvested by hand from the seafloors neighboring our home on Prince of Wales Island, but due to a lack of domestic market demand, nearly all of the harvest is shipped live overseas. We hope to change that, and thanks to strong relationships with our local diving fleet—and adventurous eaters like you!—we've been able to create and help nurture a new market here at home for nature's most curious clam.

Smoked herring delivers robust, savory flavor with a rich dose of umami and smoke. Herring is a smaller fish, and after smoking over Alderwood, the skin turns slightly crisp, and the flesh transforms into a rich mahogany brown. The result is a tin of tempting bite-sized morsels that look beautiful right out of the tin or in a pasta dish.
We source our herring from the pure, remote waters of Western Alaska where the fishery is managed sustainably and provides economic support for residents of the remote village of Togiak, Alaska (population 857).
Located on the shores of Willapa Bay in Washington State, Ekone Oyster Company is proud to be able to bring you the finest quality Pacific Oysters. They are grown using the long-line method to promote the highest quality oyster, and ensure they are always free of sand and grit. They are harvested fresh then brought to our Ekone cannery in Bay Center, WA, where the oysters are steamed and opened, then brined in small batches. The brined oysters are then meticulously placed on stainless steel racks and smoked using maple chips. A true classic that is fresh, all natural and allows the flavor of the oysters to shine!
Willapa Bay is a large estuary in the southwest corner of Washington. It is considered the cleanest and most productive coastal ecosystem remaining in the continental United States.

The Hatch Valley is in Doña Ana County, New Mexico, United States. It is located just off Interstate 25 about 40 miles northwest of Las Cruces, NM and approximately 80 miles northwest of El Paso, TX. The valley was formed millions of years ago from the flooding of the Rio Grande River. This flooding delivered rich mineral deposits that give the soil its special ability to produce a unique, flavorful chile. In addition, at an elevation of 4,000 feet, the rare mix of hot summer days, cool nights and ample water create the perfect growing conditions.
The Hatch chile is not actually a distinct variety of chile. It belongs to a group of long, green, mild Anaheim-type chile peppers that are especially prized for their superior quality. This pepper has a short season of only six weeks, and is harvested during late July and August. The fruit appearance is long and curvy and the pods range from 4” all the way to 12”. They are firmer than the Anaheim variety and have a greater range of flavor. They have a wonderful smell in their raw state and are wonderful when roasted.

Inoculated rice, salt, and water ferment to produce a burst of umami that keen chefs are using to impart memorable flavors into their menus.
Pickled chili pepper mash, roasted shishito peppers, yuzu zest, and garlic are combined with the shio koji and the result is an exciting condiment that captures spice, a touch of smoke, the zip of garlic, floral citrus, and a hint of yeast.
