The Griottines® recipe uses the special Oblachinska Morello Cherry. This cherry is only grown in the Balkans, and is known for its unique taste. During harvest each cherry is hand-picked, leaving the stalk behind. A rigorous sort process selects the best cherries, and within 6 hours of harvesting the first maceration occurs. This artisanal process, and attention to detail, preserves the special flavor and physical properties of the cherries. The Morello cherries, and the liqueur, through natural osmosis, become something magical. Another sort process selects only the perfect cherries. The pit of each cherry is then carefully removed through the hole left by the missing stalk. The cherries look whole but do not have the pit. These depitted cherries are then macerated in different liqueurs for different time periods based on a secret, traditional recipe. They are delivered to you for maximum enjoyment!

We love it in this cocktail: 3 ounces Del Maguey Vida Mezcal, 3 ounces grapefruit juice, 1 ounce lime juice, 1 ounce Orgeat, several dashes Mole Bitters. Served on the rocks. For a bit more spice, infuse the Mezcal with your favorite chile pepper such as jalapeno or our favorite, chipotle. These are best in spirit-forward cocktails of almost any kind ranging from the Old Fashioned (you pick the spirit, it will sing) to any aperitif/digestif you can imagine.
The predominant ingredient in these rippin’ bitters extracted from house distilled rye (Willamette, grown by Camas) and red corn (Oaxaca, grown by Masienda) is Newtown Pippin cider apples from 5 Mile Orchard, organically grown 50 miles from the distillery. With the help of their friends, they crushed tons of apples, naturally fermented them into cider and then they blended the cider with a high proof maceration of Cloud Forest Yellow Cardamom, Royal Cinnamon, Ea Sar Peppercorn, Pemba Clove, Eleuthero, Suma, and Gentian.
Super different from any other Apple Bitters on the market: the flavor profile is not based on sweet baking spice/apple pie. Instead, the focus is on exemplifying the flavor profile of this cider apple.

We love these candied, sweet, and delicious Martin Sec Pears which are native to the Province of Cuneo in Northern Italy. These candied pear cubes are perfect for folding into batters and doughs, filling crepes, mixing in or topping ice cream and gelato, and are wonderful in panna cotta.

These cubes of candied orange are made from fragrant bitter-sweet Sicilian oranges. They will bring a lovely orange flavor to crepes, breads, cookies, cheesecake, panettone, ice cream, gelato, and chocolate tarts.
In baking we simply add these directly into the batter or dough.
These cubes of candied lemon are made from Sicilian lemons which have a lovely, bright flavor. The sharpness normally associated with lemons is softened by the sugar syrup while retaining the freshness. These candied lemon cubes are great in homemade ice cream, gelato, baking (fruit cakes, cup cakes, chocolate desserts, panettone), and cocktails.
Ingredients: lemon peels (60%), sugar, glucose syrup.
These candied Taggascia olives are perfectly balanced, not too sweet, not too salty. This savory-sweet combination makes them perfect snacking olives, great for an antipasti platter, and we love them in cocktails and savory pastas.

Rillettes are made by cubing delicate meats, salting them, and then slowly cooking them in fat until they are tender enough to be easily shredded. They are then cooled with a small amount of fat in order to form a paste which can then be spread on bread, toast, or crackers.
