Lampescioni are a traditional wild-gathered food typical of the Puglia region of Italy. Though called wild onions they are actually in the hyacinth branch of the asparagus family (Muscari racemosum). They have the delicate bitterness of that familiar vegetable but with the shape and texture of a roasted scallion. These springtime bulbs are lightly pickled and exclusively packed in olive oil for RITROVO.

In Puglia they are used in frittatas and as a garnish for the regional dried bean and dandelion stew, fave e cicoria. They can be great atop cooked or pureed beans of any kind. Piquillo Peppers, meaning "little beak" for their distinctive pointed shape, are picked and produced almost entirely by hand. The anchovy, a traditional food of the Basque Country, is a mainstay of this region's fishing economy. The Spanish name "boqueron" comes from the size of the anchovy's mouth or boca, which is large in proportion to the rest of the body. Anchovies are typically harvested in the spring when they accumulate the most fat and flavor. Small nets are used to protect the quality of the fish and reduce by-catch. Once caught they are gutted, placed in barrels with salt-layer separations, and weighted. Once the fish have matured, a minimum of 6 months, they are washed to remove the bones and skin, and then canned in high quality olive oil.

My life just changed!!

Generally, I am a "Take them or leave them" person with regards to clams. If they are in a dish, I'll eat them, but I never add them to a dish, so I definitely would not seek them out.

These are incredible, life changing, clams. Are they a bit pricey? Yes so really just for a special occasion, but wow, it makes that occasion REALLY special!!

Conservas de Cambados is based in Galicia in Northeast Spain. This is the region of the Arousa Ría, which is well-known not just for its size, but also for the richness of its marine life. This area is particularly suitable for harvesting clams, cockles, mussels, and other bi-valves.

Each family lays claim to a 100 square foot section of sand and seeds the area with baby clams. These nurseries, known as "bateas", are very valuable and respected.

Conservas de Cambados takes great pride in selecting only the plumpest, tastiest clams. They hand harvest, then carefully cook, these clams in sea water. The Griottines® recipe uses the special Oblachinska Morello Cherry. This cherry is only grown in the Balkans, and is known for its unique taste. During harvest each cherry is hand-picked, leaving the stalk behind. A rigorous sort process selects the best cherries, and within 6 hours of harvesting the first maceration occurs. This artisanal process, and attention to detail, preserves the special flavor and physical properties of the cherries. The Morello cherries, and the liqueur, through natural osmosis, become something magical. Another sort process selects only the perfect cherries. The pit of each cherry is then carefully removed through the hole left by the missing stalk. The cherries look whole but do not have the pit. These depitted cherries are then macerated in different liqueurs for different time periods based on a secret, traditional recipe. They are delivered to you for maximum enjoyment!

Preserved doqq lemons are an authentic, and essential, component of many North African, Mediterranean, and Indian recipes.

These traditional doqq lemons (Citrus limonum Risso var. pusilla R), known in Morocco as citron beldi, or l'hamd beldi, grow in the Taroudant region outside of Agadir.

They are then washed, threshed and spend a night in a tank of clear water. The skin surrounding the kernel is then very soft and can easily be removed. The corns are washed several times and sun-dried for two to three days.

We advise you not to cook it, just possibly heat it slightly at the end of cooking or in a sauce, so that it keeps its crunchy texture. It is perfect sprinkled on top of meats such as beef or duck, and will surprise your guests in a chocolate mousse or on ice-cream or grilled fruits.

The green peppercorns are washed and blanched and undergo a complex process of fermentation with Kampot sea salt. This fermentation reinforces the flavor that is like the fresh green pepper eaten fresh in Cambodia. Traditional recipes in the Kampot and Kep regions use a lot of fresh green pepper (Kep crab or prawns fried with green pepper, as well as many salads and local dishes). Green pepper cannot be kept fresh and must be eaten within 3 or 4 days so this salting process preserves the same flavors so it can be delivered to you!

Kampot Red Long Pepper, "Piper retrofactum", is a flowering vine of the family of peppers, originally from Java, Indonesia. The first reference to long pepper appeared in Indian textbooks of Ayurvedic medicine, where its medicinal and dietary benefits are described in detail. Very popular in Roman and Greek times, it was one of the first spices to reach Europe, from the 6th or 5th century BC.
