In 1891, in Vizcaya (Spain), Bernardo Ortiz de Zarate founded Conservas Ortiz. The Bonito del Norte is the most valued member of the tuna family - highly appreciated for its white flesh, exquisite flavor, and delicate texture.

It is fished using traditional hook and line methods, thus preserving the wonderful texture and flavor which is often lost when fishing with nets. Only the best of the catch is selected to ensure exceptional taste, freshness, and quality. This dolphin-free tuna from the Basque region of Spain (Bay of Biscay in northern Spain) is then gently cleaned by hand.

Arroyabe Bonito Tuna is so good it seems a shame to use it to make tuna salad. However, this tuna elevates the tuna salad sandwich to gourmet level. You won't be able to concentrate on your work all morning long.

I made tuna sandwiches with this the other day, though I did pick at the tuna first before preparing the sandwich! It has a rich nutty flavor, and I used the oil as a binder for the bit of onion that I added. Only a hint of mayonnaise was added, and I liked that. Usually I buy tuna in water, and I throw out the water.. what else am I throwing out? Vitamins? Flavor? This was enough for two sandwiches. I think I'll use it for stuffing an avocado next time.
