In 1891, in Vizcaya (Spain), Bernardo Ortiz de Zarate founded Conservas Ortiz. Since then a total of 5 generations have overseen the family business and continued to advance the artisanal and traditional fishing and processing techniques of Bernardo. Working using only artisanal methods, Ortiz takes particular care to preserve the art of fishing and the freshness of the fish.

The Bonito del Norte is the most valued member of the tuna family - highly appreciated for its white flesh, exquisite flavor, and delicate texture.

It is fished using traditional hook and line methods, thus preserving the wonderful texture and flavor which is often lost when fishing with nets. Only the best of the catch is selected to ensure exceptional taste, freshness, and quality. This dolphin-free tuna from the Basque region of Spain is then gently cleaned by hand.

I love the richness and the elegant finish of this tuna. My new favorite use for it is to mash (or puree) it with mascarpone, a few chopped capers, and a bit of lemon zest to make a great tuna bruschetta. A fantastic complement for traditional types of tomato bruschette. Check it out. The leftover oil in the jar brings a delicious tuna essence to any dish - use it in a salad dressing to bring a dash of nicoise to the salad!
