One of the most common types of aji (chili) in Peru, Aji Panca is 3 to 5 inches in length and has a thick flesh that matures from a green to dark red in color. Distinct from the other ajis in its spiciness, Aji Panca is mild in heat intensity (a heat level of 2 on a scale of 10; 1,500 Scoville units) and provides a fruity, berry-like flavor that goes well in stews, sauces, and fish dishes.
Aji panca is so sweet, so berry-like, that it can be finely chopped or ground into a powder and tossed into foods to add a sweet, mild heat.
To create a paste, remove the stems and soak ajis in water overnight. Drain and mix ajis in a blender with salt, pepper, garlic and extra virgin olive oil. For a more mild paste, remove the seeds and veins before blending. You can freeze the paste for longer storage as necessary.

DO NOT SOAK. Put the beans into a large pot, cover with water. Bring water to a boil, then lower heat and simmer 1-1.5 hours for "al dente." Cook longer for soups and spreads. Do NOT stir during the cooking. Beans may also be cooked overnight in a crockpot on low heat, or in a 250F oven for several hours.

They're one of only a few chocolate makers who press their own cocoa butter. One of the many benefits of this time consuming process is that they're able to make this rich, incredibly flavorful hot cocoa mix from scratch.
Most hot cocoa is alkalized, which means it's washed with a solution of potassium carbonate. This allows the cocoa powder to dissolve in milk or water more easily, but significantly alters the flavor. Alkalizing also removes a significant amount of the natural flavanols, which are compounds that play a significant role in the beneficial effects of eating cacao.
This cocoa is NOT alkalized. You may need to stir a your hot cocoa a bit more vigorously but you'll taste the unique flavor of the beans, and get the full benefit of cacao's flavanols!
This single origin (Guatemala Asochivite) pure dark chocolate, contains all of the tasty and healthy components of the cacao bean, unlike most hot cocoa mixes which have been processed to remove the cocoa butter. This keeps the chocolate in its purest form for a creamer texture and fuller flavor profile.
Add 1 cup milk to a small saucepan, and then add 3 Tablespoons Drinking Chocolate. Bring to a low simmer. Whisk vigorously until well combined and frothy. Pour into a mug and enjoy!
DO NOT BOIL THE MILK, that will be too hot and you will lose the nuances of the chocolate. Chocolate melts around 100F, so get your milk around 130-150F, which will be hot enough to melt it, and hot enough that you are having "hot chocolate," but not so hot that you will ruin the beautiful chocolate flavors.
