The “gateway chocolate” for non-believers. This chocolate is made with organic cacao from Bertil Akesson’s farm in the Sambirano Valley in Northern Madagascar, a region known for producing cacao rich with notes of citrus.
What's the difference between "drinking chocolate" and "hot cocoa"? Drinking chocolate is made from pure dark chocolate, containing all of the tasty and healthy components of the cacao bean, unlike most hot cocoa mixes which have been processed to remove the cocoa butter. Drinking chocolate keeps the chocolate in its purest form for a creamer texture and fuller flavor profile.
Add 1.25 cups milk to a small saucepan, and then add 4 Tablespoons Drinking Chocolate. Bring to a low simmer. Whisk vigorously until well combined and frothy. Pour into a mug and enjoy!
DO NOT BOIL THE MILK, that will be too hot and you will lose the nuances of the chocolate. Chocolate melts around 100F, so get your milk around 130-150F, which will be hot enough to melt it, and hot enough that you are having "hot chocolate," but not so hot that you will ruin the beautiful chocolate flavors.
May contain traces of peanuts, tree nuts, wheat
Ingredients: organic chocolate, organic cane sugar

One of the most common types of aji (chili) in Peru, Aji Panca is 3 to 5 inches in length and has a thick flesh
that matures from a green to dark red in color. Distinct from the other ajis in its spiciness, Aji Panca is mild in
heat intensity (a heat level of 2 on a scale of 10; 1,500 Scoville units) and provides a fruity, berry-like flavor that
goes well in stews, sauces, and fish dishes.
Aji panca is so sweet, so berry-like, that it can be finely chopped or ground into a powder and tossed into foods to add a sweet, mild heat.
To create a paste, remove the stems and soak ajis in water overnight. Drain and mix ajis in a blender with salt, pepper, garlic and extra virgin olive oil. For a more mild paste, remove the seeds and veins before blending. You can freeze the paste for longer storage as necessary.
Ingredients: Organic Panca chili.
1.25 ounce bag
Aji amarillo, or amarillo chili, is the most common type of aji and is one of the most important ingredients in Peruvian cooking. It has a heat level of 7 on a scale of 10 (50,000 Scoville units). It is great in combination with meat, poultry, fish, vegetables, pasta, and rice dishes, and is used to season nuts.
The unique flavor of the Aji Amarillo makes it worth seeking out and incorporating into your cooking. Even though it is a "chili pepper" it has a lot of fruitiness combined with its heat, unlike poblanos or jalapenos which can be harsh. It is a very versatile chili, suitable for everyday use as it will complement your dish without overwhelming it.
Try them in these recipes:
Ingredients: Organic Amarillo chili.
Aji Limo is a chili grown and used mostly on the northern coast of Peru. The pod is 2-3 inches long and changes from a yellow to deep reddish-orange color when it
ripens. Aji Limo is spicy (a heat level of 8 on a scale of 10; 60,000 Scoville units) and is primarily used to prepare ceviche and rice dishes. It is also wonderful as a base for chicken and pasta recipes, and a perfect way to add an extra flavor dimension to stew and chili.
Ingredients: Organic Limo chili.
From their home base in the Abruzzo Region of Italy the Iacovanelli family, ADI’s owners, care for their bees with strictly organic techniques that blend solid traditions with contemporary innovation. They only harvest their honey when it is fully mature: when flavor, color, aroma, and nutritional content reach their peak.
This traditional, pale amber, and slightly chewy, Mediterranean honey has an intense and savory aromatic profile, and a full-bodied sweetness with a strong piney aroma and herbaceous flavor. Excellent as a glaze for roasted chicken or pork, for baking - especially in olive oil cakes, and on whole grain toast.

This Cherry Blossom Honey is a pale, opaque, and creamy honey with a complex sweetness. We think it is excellent with smoky or sheep’s milk cheeses, Japanese green teas, and pastries.
This is a rich, dark amber and liquid honey from the chestnut tree flowers of the Abruzzo hills. We love this savory honey as it is perfect for glazes, pairs wonderfully with Taleggio and Fontina cheeses, and is great on roasted meats. It is also incredible on radicchio, on squash, and in pumpkin soups.

Antonino Mennella is a passionate young extra virgin olive oil producer from the Salerno area of Campania, Italy. On his small 2,000-tree farm he produces this limited edition Raro ('rare') extra virgin olive oil by removing the pits of the Ravece and Rotondella olives, and then only pressing the remaining fruit. This process is known as "denocciolate".
This pitting before pressing is unique, and it creates an extraordinary extra virgin olive oil unlike any other you will find.
Antonino uses advanced pressing and processing technology to produce a super extra virgin olive oil with double the average content of polyphenol antioxidants, and an astoundingly low level of free oleic acid. As a result, this extra virgin olive oil has almost the same level of freshness as an olive still on the tree.
La Madonna dell’Olivo has optimal levels of vitamin E tocopherols, and Omega-3 and Omega-6 fatty acids. This extra virgin olive oil has a remarkably well balanced flavor profile and is thus a ‘double winner’ -- an elixir of good health with amazing flavor.
This is a deep, intensely fruity extra virgin olive oil with irresistible aromas.
"My objective," says Antonino, "is to fight uniformity and exalt differences." Try this Raro Extra Virgin Olive Oil and you will see exactly what he means!

The Castillo de Canena Estate has produced exceptional extra virgin olive oils in the Guadalquivir Valley of Andalusia in the south of Spain since 1780. This exceptional smoked oil is artisanally crafted by slowly infusing their high quality, hand-harvested, Castillo Arbequina Extra Virgin Olive Oil with naturally produced smoke from a mix of organic oak, beech, and birch woods. When you open the bottle you will smell, and taste, exquisitely smoked Arbequina. This unique oil is divine on its own, or you can pair it with your favorite recipes to add a smoky component to your dressings, marinades, and final dishes.
In order to produce this wonderful, exquisite, cutting-edge cold smoked extra virgin olive oil, Castillo de Canena designed a unique process. Their burner allows the wood chips to slowly smolder. The smoke is then cooled, and passed through a water filter. They then slowly, over the course of 6 hours, release the cold smoke into the bottom of the tank which holds the Arbequina Extra Virgin Olive Oil. This artisanal process naturally imparts the smoky flavor and aroma into the oil.
Produced and bottled by Castillo de Canena with olives grown, harvested, and pressed at the Castillo de Canena Estate in Spain.
