In 1982 L’Epicurien was a simple delicatessen in Paris. But 15 years later Mr. Bernard Le Gulvout decided to focus exclusively on the traditional production of jam, and savory products.

In 1997 he moved to the Languedoc Roussillon region of France, known for their high quality fruits and vegetables, so he could have direct access to the region's finest farms.

I use soffrittos and confits like this quite often. I substitute them for a true ragu to make the base for simple but singing pasta sauces. This will be amazing with savory crepes. Anything off the grill, but especially burgers, should get a small topping of this confit. Try it in simple tacos with a carne asada like diced steak. Putting this on eggs is too easy, but I cannot stop doing it. Bake in phyllo with brie.

These caramelized shallots have a mellow, rich, and complex depth of flavor and are so easy to pair with a cheese and cracker plate. Unexpected guests stopping by? Not a problem as long as I have this confit and water crackers in the pantry!
