A condiment rather than a vinegar because of its low acidity, the White Balsamic follows the standard methods of Balsamic Vinegar production. The white grape must is cooked at low temperatures in a vacuum to avoid darkening the blend before it is matured in a series of wooden oak casks.

The wonderful people at Trampetti came through with their leccino/frantoio olive blend. They continued to meet the highest standards, as one would expect from Trampetti, and meet our goals as well.

This domestic San Marzano product has been cultivated in the USA using the same variety of seed used in San Marzano, Italy, which produces a tomato that is deep red, firm and meaty, and with very few seeds.
