What I found incredible today was something I wanted to share with you, and it isn't about price.... it is about

Quality

First, the food world is a very small place overall. There are a few handfuls of importers who bring in the majority of the products you see. We're talking dozens here, not hundreds. So every single retailer starts with the same source for identical products. So you would think that all you need to do is price compare and you'll be fine. WRONG!

I saw a review over on a competitor's website, and the customer gave ZERO out of 5 stars for a product, calling it "awful, rancid, had to spit it out" and further went on to affirm "I know my food, am a connoisseur of olive oils, and this was terrible". I carry this olive oil, I use it myself weekly. So I go through, in my own kitchen, a bottle every 4-6 weeks. I have NEVER had such an experience with any bottle from this importer. It is one of the freshest, most vibrant, gorgeous olive oils on the market today. So what is going on?

SIMPLE in my mind. This connoisseur went to an incredibly well known online retailer more famous for selling books than food. And I would guess they treat books, food, lawn furniture and everything else all the same: warm warehouses, large pallets sitting around for weeks, months, multiple months, waiting to be purchased. FOOD should be CARED FOR. Olive oils don't like heat, don't like light, do not like being "old" and should be consumed within a year of harvest/bottling.

In short, it does not surprise me that the review of this fabulous olive oil at that other site was negative. I'm guessing that bottle sat and sat, was exposed to heat and light and was the better part of a year old before it ever got to the consumer. I saw other products that were "sold by" and listed another 3rd party vendor. REALLY? How many hands should your purchase pass through, how many chances for someone to put your box on a hot loading dock, to let it sit around for a while, should you really tolerate? This is what you want to cook with, feed yourself, your family and your friends. You put it into your body!! Don't you deserve the best kept, freshest, tastiest product you can get your hands on?

Unfortunately, this is not limited to just online stores either. I have bought from a very famous brick and mortar store here in my own city and have had many oxidized, rancid oils from nut oils to extra virgin olive oils. I have no idea how long they sat in the stockroom, or on the shelf, but certainly they were exposed to some very very bad conditions like heat and light.

Acquerello is the rice grown, aged, whitened, and packed in Italy on the Colombara farm by the Rondolino family.

It is the ultimate rice: first the unhusked rough rice is aged to perfection for at least one year, then it is whitened slowly using "The Helix" where grains rub gently one against the other, and finally it is restored with its most precious element, the embryo or germ. José Páez Lobato is a family enterprise that specializes in the making of fine sherry vinegar. The Bodega, or cellar, was founded in 1933 by Francisco Paez Sanchez, and is now managed by his sons.

This 50 year old sherry vinegar is characterized by its amber color, delicate smell, and unique taste... all of which are due to a careful and prolonged aging process. Gran Capirete is aged in American Oak barrels, and the solera that gave birth to it was established in 1946 (so it is actually 75 years old!). It has an unforgettable flavor, with a hint of nuttiness. This vinegar is drier than balsamic vinegar and has an acidity of 8º.

J. Leblanc has changed little since 1878, the year it was founded. It is still run by a Leblanc, Jean-Charles, grandson of the founder. It is still located in the southern most village of Burgundy, Iguerande, and it still manufactures the highest quality, small-batch, handcrafted nut oils in France.... if not the world.

J. Leblanc starts with the careful selection of the absolute highest quality whole nuts available, grown on many of the same farms that J. Leblanc has been doing business with for generations. For each batch of oil about fifty-four pounds of nuts are ground into a paste using the huilerie's original granite mill. In order to guarantee an even roast, this paste is constantly stirred in a roaster for 10 minutes. The roasted paste is then transferred to a mechanical press where it is divided in half and separated with filter cloth. The oil is expressed at 22,000 pounds of mechanical pressure. After pressing, the oil rests from seven-to-fourteen days to allow the sediment to settle before bottling. This is a labor, and time, intensive process which produces only 300 liters a day. These nut oils are pure, unadulterated, unfiltered, and unrefined.

One of the most important facts about Huilerie Leblanc's production is not the "how" but the "when". Since Huilerie Leblanc does not have large storage facilities, or refining capabilities, production takes place when orders come in - guaranteeing the freshest nut oils delivered to your door. It's not only a difference you can taste - in their clean, bright, and deep flavors, but also extends their longevity by up to a year.

  • Nut oils can be used for salad dressings with quality vinegar such as champagne, Banyuls, sherry, or raspberry. The usual ratio is three parts oil to one part vinegar.
