Oils are delicate. Extra Virgin Olive Oils, Truffle Oils and Nut Oils are all adversely affected by heat, light, air, and time (i.e. old is bad). First you need to know your source. Many supermarkets treat oils like they do sugar, flour, and other non-perishables. Cases of oils are transported in non-temperature controlled trucks, they sit on docks out in the sun, are stored in hot warehouses, and finally put on the shelves, subject to light and heat. They buy huge quantities at a time so the oils can sit around a long time before you purchase them. Here at Gourmet-Delights.com we directly source all our oils, in small lots [buying no more in one order than we can sell in 4 weeks time] and then store them in our wine cooler (55F) before we ship them to you. We know the difference between REALLY FRESH oils and oils that are not treated properly. One of our favorite local chefs said "I thought I was getting great oils at the co-op and Whole Foods but then I tried yours and realized that not only do you have the quality, but your storage and care makes a huge difference".

Once you get the oils home they should ideally be stored in a dark place at 55F. If you have a temperature controlled wine cellar, this is a perfect place. OR if you prefer to have them closer at hand while cooking, or do not have a wine cellar, storing them in the refrigerator will work just fine. However, note that extra virgin olive oils may solidify to an extent at refrigerator temperatures, so plan to pull them out of the refrigerator as part of your meal prep work so they have a chance to warm up and become fully liquid again.

ALWAYS smell and taste your oil before using it. If the oil has turned you will get a rancid, oxidized, off-putting experience. And that can ruin your meal. Remember that some oils are made to be spicy, peppery, grassy, and even bitter. This is not a sign of poor quality but rather these characteristics come from the particular olive being used. Just as Pinot Noir grapes are different the Cabernet Sauvignon grapes, and give you different flavors in wine, different olives produce different flavors in extra virgin olive oils.

Antonino Mennella is a passionate young extra virgin olive oil producer from the Salerno area of Campania, Italy. On his small 2,000-tree farm he produces this limited edition Raro ('rare') extra virgin olive oil by removing the pits of the Ravece and Rotondella olives, and then only pressing the remaining fruit. This process is known as "denocciolate".

These exquisite anchovies, packed in the finest Spanish olive oil, are hand-packed according to traditional methods using carefully selected fresh fish harvested off the Cantabrian Coast in northern Spain.

The anchovy, a traditional food of the Basque Country, is a mainstay of this region's fishing economy. The Spanish name "boqueron" comes from the size of the anchovy's mouth or boca, which is large in proportion to the rest of the body. Anchovies are typically harvested in the spring when they accumulate the most fat and flavor. Small nets are used to protect the quality of the fish and reduce by-catch. Once caught they are gutted, placed in barrels with salt-layer separations, and weighted. Once the fish have matured, a minimum of 6 months, they are washed to remove the bones and skin, and then canned in high quality olive oil.

Anchovies are high in Omega-3 fatty acids which reduce cholesterol and help in the prevention of cardio-vascular disease. They are also rich in iodine, calcium, Vitamins A, D, B12, B6, B2, and unsaturated fatty acids such as linoleic acid.

The most wonderful small sardines in olive oil we have ever tasted come from the Estuaries of Galicia, Spain. This is a true Spanish food gem and we are very pleased to be able to offer it to you.

Tenuta Sant’Ilario is a farm located between the sea and the mountains, and stands on a green hill overlooking the sea. It was founded in 1982 and, although it has grown in technology and manufacturing, it has always remained a small, family run business.

Tortiglione is an ancient heirloom olive variety that is widespread in the areas of Teramo and part of Pescara. The name “tortiglione”, or twisted, comes from its clockwise tortile trunk of the olive trees. The tortiglione olive is not suited to mechanical harvesting, it bruises and tears easily, so it is always harvested by hand. The variety is recognized as Biennial bearing, and thus may not be made in every year. Tortiglione olives are late ripening, providing an oil rich in polyphenols (antioxidants), which indicates high quality. This varietal typically has a spicy flavor profile.

This extra virgin olive oil is 100% Tortiglione.
