Rose petals are one of over fourteen (14) spices added to give this Belazu Rose Harissa paste its complex and spicy taste. Harissa was originally a staple of Tunisian cooking but now it is used throughout North Africa as a seasoning. The rose petals provide a counter point to the chili heat, adding a richness and complexity you are sure to enjoy.

Harissa is perfect for adding to traditional North African tagines, and for stirring into couscous. However, this is such an extremely versatile product so do not restrict its use to only traditional North African recipes. Preserved doqq lemons are an authentic, and essential, component of many North African, Mediterranean, and Indian recipes.

These traditional doqq lemons (Citrus limonum Risso var. pusilla R), known in Morocco as citron beldi, or l'hamd beldi, grow in the Taroudant region outside of Agadir.

The thinner skin, and fragrant aroma, of doqq lemons, makes them the most highly prized lemons of North Africa. Paula Wolfert, an expert on Moroccan cuisine, considers them the crème de la crème in her book "The Food of Morocco".

These lemons have a delicate "zing", along with a tantalizing sweet and sour aroma, that is unmistakably and evocatively North African.

A few serving ideas:

  • Add these lemons to tagines, roast chicken, fish, salsas, and salads - all kinds of Mediterranean cooking, to get that delicate citrus flavor.
  • Make a traditional Moroccan Tagine.
  • Create your own Ngam nguv, a traditional Cambodian chicken soup with whole preserved lemons.
  • Combine them in your recipes that use olives, artichokes, seafood, veal, chicken, and rice for added flavor and complexity.
  • Use them as an accompaniment to curd rice, which is often the last course in South Indian Cuisine.
  • Add the pickled pulp and liquid to Bloody Marys and other beverages where lemon and salt are used.
  • Combine preserved lemons with horseradish if you want to make an American-style cocktail sauce.

A unique oil with a mildly toasted, nutty flavor. It is known as "the golden oil."

The Argan tree is unique to the South Western corner of Morocco and is called the "tree of life" due to the importance of this tree, and its fruit and oil, to Moroccan traditions and culture. This remarkable organic Argan oil is made by cold pressing the seeds inside the nut of the Argan fruit. It takes 100 kilograms (220 pounds) of fruit to produce just 1 liter (33.8 fluid ounces) of oil, meaning it is an extremely labor intensive oil to produce.

Once the fruit ripens, it is harvested and laid out in the sun to dry. The flesh of the fruit is removed, and the hard shell of the nut is cracked to remove the almond shaped kernels inside. These are gently toasted and, once cooled, ground in a stone ‘rotary quern’, similar to a stone pestle and mortar. The resulting nut paste is then massaged by hand to extract the luscious oil.

Rich in Vitamin E and linoleic acids, and with a high unsaturated fatty acid content (over 80%), this unique organic Argan oil is full of health-giving properties. Vitamin E promotes healthy hair, skin, and nails, and the unsaturated fatty acids are great for keeping the heart healthy and lowering cholesterol levels. Initial tests indicate it may reverse the metabolic changes that occur from a high sugar diet, thus being a natural aid in the fight against diabetes; and the high levels of antioxidants show promise in fighting cancer. It is light in color with a reddish tinge and it is milder in flavor than sesame or walnut oil, yet its taste is distinctly nutty. Traditionally used for cooking tagines and dressing couscous, organic Argan oil also adds a unique and wonderful flavor to salads and other North African dishes.

A few serving ideas:

  • Mix organic Argan oil with honey and yogurt like the Berbers do for a nutritious breakfast.
  • Make amlou: a mixture of Argan oil, honey, and crushed almonds. It tastes a little like peanut butter and is great on toast.
    • 1/2 pound roasted Marcona Almonds
    • 1/2 to 2/3 cup Belazu Organic Argan Oil
    • 1/3 cup raw honey
    • In a food processor, or mortar and pestle, finely grind the almonds. Add the Organic Argan Oil a tablespoon at a time. Now add the honey until the desired sweetness is achieved. Serve in a small bowl with slices of pita bread for dipping

Couscous is a type of semolina dish essential to North African cuisine. In Algeria, Morocco, Tunisia, and Libya couscous is normally made in tagines, cooked in broth with vegetables and meat, usually lamb. In some regions it is cooked with harissa; a hint of spiciness adds complexity and depth to its flavor.

When someone mentions the word ‘couscous,’ yellowy hard wheat granules may first come to mind, however in some regions couscous is made from pearl millet, cornmeal, or barley. Barley couscous is traditional in certain parts of Morocco, and ours comes directly from Sale, Morocco. Barley couscous provides a more grainy texture and a nutty, natural flavor as compared to its wheat counterpart.

Barley couscous is perfect for people who suffer from wheat intolerance and its high fiber content makes it a great, healthy alternative to wheat couscous. It is a really versatile ingredient, serving as a great carbohydrate base to almost any recipe. Prepared with fish, meat or vegetables and served with a dollop of Rose Harissa, barley couscous is simply delicious.

Easy to prepare: put 3.5 ounces (100 grams) couscous into a bowl, pour 6.75 ounces (200 milliliters) salted boiling water or stock (vegetable or chicken is recommended) over the couscous, stir, cover, leave for 5 minutes, drizzle with extra virgin olive oil, fluff up with a fork, and serve.

This Egyptian spice mixture is made by blending roasted sesame seeds, almonds, and hazelnuts with ground cumin, coriander, and sea salt.

Dukkah is traditionally served alongside hearty pieces of bread or crisp vegetables, and a small bowl of fantastic extra virgin olive oil. Dip your bread, or vegetable of choice, in the extra virgin olive oil and then in the Dukkah. The warmth of the spices is heightened by the richness of the extra virgin olive oil for an unforgettable bite.

Some wonderful uses:

  • Sauté blanched chard in extra virgin olive oil, garlic, and preserved lemon. Sprinkle with Dukkah to taste.
  • Add Dukkah to hummus to spice it up and add some crunch.
