O Roasted Garlic, Blue Cheese & Pear Salad
This combination is one of our new favorites. We love the creamy notes of Point Reyes Blue Cheese swirling with the floral kiss of O Honey Apple Sparkling Cider Vinegar splashed over crisp pears.
Ingredients:
- 1/4 cup O Roasted Garlic Olive Oil
- 2 Tablespoons O Honey Apple Sparkling Cider Vinegar
- 1 medium head red butter lettuce, torn into large pieces
- 1/4 cup Point Reyes Blue Cheese (feta optional), crumbled
- 1 thinly sliced pear
- 2 Tablespoons thinly sliced red onion
- 1/2 teaspoon Maldon Organic Sea Salt or Fleur de Sel
- 1/2 teaspoon freshly ground black pepper
In a small bowl whisk the O Roasted Garlic Extra Virgin Olive Oil & the O Honey Apple Sparkling Cider Vinegar together. Add the Maldon Sea Salt & freshly ground black pepper to taste. Now add the thinly sliced pear to this vinaigrette. Set this mixture aside.
Place the red onion & butter lettuce in a medium bowl. Now add the vinaigrette with pears from the small bowl & mix everything together gently by hand. Divide the salad among 4 plates and crumble the blue cheese on top. Add a final pinch of Maldon Sea Salt & some freshly ground black pepper.
Serves 4.
Cool Honey Apple Slaw
We like the crisp cooling taste of slaw with the sweet Fall flavors of Honey Apple Sparkling Cider Vinegar. Rich in vitamin C, beta-carotene, fiber & folic acid. This healthy slaw combines the creaminess of mayonnaise with the bright tangy dressing.
Ingredients:
- 4 Tablespoons Mayonnaise, plain yogurt or Greek Yogurt depending on your personal taste preferences
- 1 Tablespoon Gourmet Delights Extra Virgin Olive Oil
- 2 Tablespoons O Honey Apple Sparkling Cider Vinegar
- Salt and Pepper to taste
- 5 cups finely sliced green cabbage (about half a head)
- 1 cup Julienned Fuji apples
- 0.5 cup roasted almond or pecan slivers (optional)
In a small bowl whisk together the first 3 ingredients. Add salt and pepper to taste.
In a medium bowl combine the finely sliced cabbage & julliened green apples. Just before serving, mix the dressing with the slaw. Sprinkle with the roasted almond or pecan slivers if desired.
Prepping the cabbage: Use a mandoline slicer for paper-thin strands or slice very thin strips with a sharp knife.
Serves 6.
O Honey Apple Grilled Chicken
This simple recipe brings out the beautiful sweet notes of O Honey Apple Sparkling Cider Vinegar, the tangy creamy goodness of Greek yogurt (or substitute plain yogurt or Mayonnaise per your own personal taste preferences), and the warm spicy flavor of coriander. Healthy & Delicious.
Ingredients:
- 6 boneless, skinless chicken thighs
- 1 cup non-fat Greek Yogurt, plain yogurt or Mayonnaise
- 0.25 cup Gourmet Delights Extra Virgin Olive Oil
- 0.5 cup O Honey Apple Sparkling Cider Vinegar
- 1 teaspoon ground coriander seeds
- 0.25 teaspoon chili flakes
- Salt and Pepper to taste
Whisk together the yogurt, extra virgin olive oil, vinegar, coriander, and chili flakes in a glass bowl that is large enough to hold the 6 chicken thighs. Add the chicken to the bowl and toss until the chicken is evenly coated. Cover the bowl and refrigerate for 2 hours.
Heat your grill to medium-hot. Remove the chicken from the marinade, and salt and pepper as needed. Cook on the grill about 4-6 minutes per side. Remove the chicken from the grill, place on a serving platter, and garnish with cilantro sprigs. You can serve this with Basmati rice and fresh cucumber slices, or Cool Honey Apple Slaw and a simple pasta.
