Doucet Confiserie is a family-run confectioner in Provence, surrounded by orchards bathed in a climate ideal for fruit production. This small company has stayed remarkably true to its roots over time, using traditional techniques and primarily local ingredients.

The lavender specific to Provence has become emblematic of Provence. In this picturesque region of southeast France, lavender is found everywhere: alongside homes, in public parks, and alongside the roadways. Lavender runs cinematically for miles in gently rolling fields crowned with stunning, resplendent blue blossoms over which bees hover, getting their fill. In July, the scent of lavender wafts throughout the entire region, putting one in a restful, optimistic state of mind (lavender is famously stress-relieving).

Yet surprisingly, pure lavender honey hard to find. It is expensive to produce because it requires a lot of bee work: lavender flowers are small and don’t yield much nectar. So beekeepers instead encourage multi-floral grazing. Knowing this, when our longtime Provençal pâtes de fruits producer started making these pure lavender honey squares, we jumped on it. These soft, tender, honey squares are made exclusively with iconic yet rare French lavender honey. The taste transports you to the fields surrounding Aix-en-Provence in July.
