Cacao Crudo is the first firm in Italy to produce raw chocolate. The idea comes from Daniele Dell’Orco, anthropologist and researcher in the food sector and researcher in the conservation and protection of agricultural and wildlife biodiversity. During his many journeys and studies abroad Daniele learned about the incredible health benefits of raw cacao/chocolate. Once back in Italy, he decided to start production but he added something that in his opinion was missing in the majority of the rustic, raw chocolate that he had tasted, a passion for the most refined taste.
After two years of research to find the highest quality ingredients and two years of testing to find the best ways to preserve their precious, natural properties, Danielle started his company in outskirts of Rome. It is immediately apparent that his vision, and goal, was to offer a classier, more refined, tastier chocolate compared to the more common raw chocolate found in other products.
Cacao Crudo is the first manufacturer of raw chocolate in Italy. They use the high-quality Criollo variety cacao directly from their own supply chain which originates in the Amazonian Rain Forest of Peru. Such cacao is naturally fruity, floral, and creamy. In order to preserve its precious organoleptic qualities and nutrients, they never process it at temperatures above 45 °C.
