The most revered and coveted dry aged ham in the world. Produced from free roaming Iberico pigs indigenous to the Iberian peninsula in Spain. Popularly known as the Pata Negra or Black Hoof, these animals feed exclusively on fallen acorns, known as bellota, for three months prior to slaughter. The resulting meat is swirled with high levels of flavorful natural fats and healthy oleic acid, for which this pig has gained international fame.
Cured for 70 days using artisanal methods in La Alberca, Spain, in the heart of a National Park declared a Biosphere Reserve by UNESCO.
