My new favorite use for it is to mash (or puree) it with mascarpone, a few chopped capers, and a bit of lemon zest to make a great tuna bruschetta. A fantastic complement for traditional types of tomato bruschette. Check it out. The leftover oil in the jar brings a delicious tuna essence to any dish - use it in a salad dressing to bring a dash of nicoise to the salad!
