VINAGRES DE YEMA was founded in 1991 by D. Fernando Terry, one of the brothers of the famous TERRY sherry and brandy family. Yema, by the way, means “yolk” as in the best part of the egg, or, in this case, the first and best juice of the Palomino Fino grape obtained from the first pressing.

Traditional production of sherry vinegar uses a series of barrels called “criaderas.” The criaderas contain vinegars of similar characteristics but different aging stages. The barrel containing the oldest vinegar is called the solera. When the solera is tapped for bottling, the vinegar is replaced by an equal quantity from the oldest criadera, which in turn is refilled with vinegar from the second oldest criadera. The process continues to the youngest criadera, which is then topped off with the grape juice of the harvest.

Most sherry producers regard vinegar as a by-product or even a mistake made during the sherry production process. Vinagres de Yema is unusual in that it embraces the virtues and complexities of vinegar on its own terms. In fact, rare old vinegars like the 40 year-old Cepa Vieja and the 75+ year-old Gran Reserva have complexities rivaling the true aceto balsamico tradizionale di Modena. The fine complexities of Yema vinegars come not only from the superior first-pressed grape juice but also the long aging in Kentucky oak barrels. These barrels have a capacity of 516 liters and are oriented toward the south or southeast to take advantage of the sea winds.
