Back in stock late February 2014.

Established in 1986 to preserve and promote the French salt marsh heritage, Esprit du Sel produces authentic, rare and traditional Fleur de Sel ("flower of the salt"). They are located on the historic island of Ré where salt has been hand-harvested from the sea since the 7th century. Facing the Atlantic Ocean, the island benefits from an exceptionally sunny climate (the number of sunny days is equivalent to the Mediterranean coasts). The French National Center of Culinary Art (CNCAC) has awarded the salt marshes of the Island of Ré with the French designation "Remarkable Site of Taste". Fleur de Sel is skimmed in the summer from the thin surface layer of the saltpans, and then crystallizes under the combined natural action of the sun and the wind.

Ingredients: Sugar, glucose syrup, Charentes-Poitou butter (certified 17%), whole milk, Pineau des Charentes wine, Fleur de Sel sea salt, sorbitol, natural flavoring, spices.

16 individually wrapped caramels per 5 ounce package

This is salty, buttery, creamy perfection. Transports me to making candy in my Grandmother's kitchen when I was a kid.

These have many rich and subtle flavors that you notice, one after the other, while eating. Best caramels I've tried.
