Smoked Sun-Dried Tomato Spread

I finally got to try the smoked tomato spread a few days ago (other than simply sticking my finger in it!). It is a lovely blast of rich tomato flavor. I served a composed salad of sliced cherry tomatoes, arugula, burrata, and parmesan frico to friends. I drizzled the salad with a little of that Ligurian olive oil Gourmet Delights sells, and put a spoonful of this delicious spread (mixed with a little olive oil) at the edge of the plate, along with a few drops of balsamic. A delicious dish!
