Goodnow Farm's single origin Almendra Blanca Hot Cocoa from Mexico won both Gold and Best in Competition awards at the International Chocolate Awards World Drinking Chocolate Competition! They're one of only a few chocolate makers who press their own cocoa butter. One of the many benefits of this time consuming process is that they're able to make this rich, incredibly flavorful hot cocoa mix from scratch. Most hot cocoa is alkalized, which means it's washed with a solution of potassium carbonate. This allows the cocoa powder to dissolve in milk or water more easily, but significantly alters the flavor. Alkalizing also removes a significant amount of the natural flavanols, which are compounds that play a significant role in the beneficial effects of eating cacao. This cocoa is NOT alkalized. You may need to stir a your hot cocoa a bit more vigorously but you'll taste the unique flavor of the beans, and get the full benefit of cacao's flavanols! This single origin (Mexican Almendra Blanca) pure dark chocolate contains all of the tasty and healthy components of the cacao bean, unlike most hot cocoa mixes which have been processed to remove the cocoa butter. This keeps the chocolate in its purest form for a creamer texture and fuller flavor profile. Add 1 cup milk to a small saucepan and bring to a slow simmer, and then add 3 Tablespoons Drinking Chocolate. Whisk vigorously until well combined and frothy. Pour into a mug and enjoy! DO NOT BOIL THE MILK, that will be too hot and you will lose the nuances of the chocolate. Chocolate melts around 100F, so get your milk around 130-150F, which will be hot enough to melt it, and hot enough that you are having "hot chocolate," but not so hot that you will ruin the beautiful chocolate flavors.
