Purple corn, once a staple of the Incan empire, is botanically the same species as regular table corn but has a deep purple color. The people of the Peruvian Andes use it to add color to food and beverages.

Quinoa (pronounced keen-wa) is a species of goosefoot that originated in the Andean region of South America, where it has been an important food for 6,000 years. This wonder plant, along with corn and potatoes, is a major food staple for the Andean cultures. The Incas considered Quinoa sacred, referring to it as "chisaya mama" or "mother of all grains".

In contemporary times, quinoa is highly appreciated for its nutritional value. Its protein content is very high (12%–18%) and unlike wheat or rice (which are low in lysine), quinoa contains a balanced set of essential amino acids for humans, making it a complete protein source. It is a good source of dietary fiber and phosphorus, and is high in magnesium and iron. Quinoa is naturally gluten-free and is considered easy to digest. Because of all these characteristics, quinoa is being considered a possible crop in NASA's Controlled Ecological Life Support System for long-duration manned spaceflights.

Quinoa flour is used for making breads, biscuits, cookies, crepes, muffins, pancakes, tortillas, and even beer. It may be used on its own in some baking, most commonly in breads or flat breads, or combined with other gluten-free flours, such as rice flour, to create a lighter baking mix. Since quinoa flour does not contain gluten, when you are making your favorite recipes like risen breads and pie crusts, you should substitute up to 50% quinoa flour in your recipes. One of the most common types of aji (chili) in Peru, aji panca is 3 to 5 inches in length and has a thick flesh that matures from a green to dark red in color. Distinct from the other ajis in its spiciness, aji panca is mild in heat intensity (a heat level of 2 on a scale of 10; 1,500 Scoville units) and provides a fruity, berry-like flavor that goes well in stews, sauces and fish dishes.

Aji panca is so sweet, so berry-like, that it can be finely chopped or ground into a powder and tossed into foods to add a sweet, mild heat.

To create a paste, remove the stems and soak ajis in water overnight. Drain and mix ajis in a blender with salt, pepper, garlic and extra virgin olive oil. For a more mild paste, remove the seeds and veins before blending. You can freeze the paste for longer storage as necessary.

Piment d’Espelette is famous for its modulated, food-friendly heat as well as its "sweet red pepper" perfume, which bring wonderful layers of flavor to your dishes.

The A.O.P. (Appellation d'Origine Protégée) designation means that this coveted spice can come only from the tiny, 22-square-kilometer region in and around Espelette, the French Basque town in a hilly, verdant region near Bayonne. The restricted area and precarious weather conditions of the Basque region limit the supplies of this precious spice.

Commercial cultivation of this spice originally began as a product of housewives’ gardens. Women grew the peppers in small quantities for home meals and sold the excess for pocket money. In fact, Marie-Jeanne, the mother of our producer at La Maison du Piment, Vincent Darrichion, was one of those women! She launched her family into the espelette business from her own kitchen garden.

The entire harvest is done by hand. The toil begins in late March, when the seeds must be sprouted in the greenhouse. Then in April, the seedlings are teased apart and placed into individual pots where they are tended in the greenhouse until they are about 18 inches tall. Piment d’Espelette is famous for its modulated, food-friendly heat as well as its "sweet red pepper" perfume, which bring wonderful layers of flavor to your dishes.

The A.O.P. (Appellation d'Origine Protégée) designation means that this coveted spice can come only from the tiny, 22-square-kilometer region in and around Espelette, the French Basque town in a hilly, verdant region near Bayonne. The restricted area and precarious weather conditions of the Basque region limit the supplies of this precious spice.

Commercial cultivation of this spice originally began as a product of housewives’ gardens. Women grew the peppers in small quantities for home meals and sold the excess for pocket money. In fact, Marie-Jeanne, the mother of our producer at La Maison du Piment, Vincent Darrichion, was one of those women! She launched her family into the espelette business from her own kitchen garden.
