Aji is the Caribbean word for chili and/or peppers. It is typically associated with Peruvian cuisine, and is often mixed together with garlic and red onions to form a paste, sauce or marinade.

A great article: "The Best Ceviche in Lima, Peru". Classic ceviche preparations are a mix of fish, salt, red onions and ají, Peru's unique line of chili peppers, all doused in lime juice. (The marinade is called leche de tigre, or tiger's milk.)

aji.panca.powder.jpg Aji Panca Organic Powder

One of the most common types of aji (chili) in Peru, aji panca is 3 to 5 inches in length and has a thick flesh that matures from a green to dark red in color. Distinct from the other ajis in its spiciness, aji panca is mild in heat intensity (a heat level of 2 on a scale of 10; 1,500 Scoville units) and provides a fruity, berry-like flavor that goes well in stews, sauces and fish dishes.

Aji panca is so sweet, so berry-like, that it can be finely chopped or ground into a powder and tossed into foods to add a sweet, mild heat.

AjiAmarillo_paste.jpg Aji Amarillo Organic Paste

Aji amarillo, or amarillo chili, is the most common type of aji and is one of the most important ingredients in Peruvian cooking. It has a heat level of 7 on a scale of 10 (50,000 Scoville units). Although they are named yellow pepper their color changes to orange as they mature. Great in combination with meat, poultry, fish, vegetables, pasta, and rice dishes, and to season nuts.

The unique flavor of the Aji Amarillo makes it worth seeking out and incorporating into your cooking. Even though it is a "chili pepper" it has a lot of fruitiness combined with its heat. This fruitiness is full-bodied and even subtle, unlike poblanos or jalapenos which can be harsh. It is a very versatile chili, suitable for everyday use as it will complement your dish without overwhelming it.

purplecornflour.jpg Purple Corn (Maiz Morado) Organic Flour

Purple corn, once a staple of the Incan empire, is botanically the same species as regular table corn but has a deep purple color. The people of the Peruvian Andes use it to add color to food and beverages.

Try it in these recipes:

  • Purple Corn Pancakes
  • Quinoa-Purple Corn Fruit Muffins
  • Organic Aji Amarillo Chile Rellenos
  • Organic Purple Corn Encrusted Halibut
  • Chicha Morada

The dark purple color is due to natural pigments known as anthocyanins, which are rich in antioxidants. Purple corn has a higher antioxidant capacity than blueberries, which is leading many to put purple corn in the "super foods" category. The antioxidants found in purple corn have anti-inflammatory properties and encourage connective tissue regeneration. Studies also indicate that these antioxidants reduce the risk of cardiovascular disease, inhibit abnormal cell growth, promote collagen formation, and improve circulation.

Purple corn flour can be used wherever you would use regular corn flour, corn meal, or substitute it for another flour to give your favorite corn based dishes an extra antioxidant burst. It can be used in raw chocolates, breads, tortillas, pancakes, muffins, and cakes. It will add an amazing color to your traditional recipes while boosting the nutritional value.

Quinoa (pronounced keen-wa) is a species of goosefoot that originated in the Andean region of South America, where it has been an important food for 6,000 years. This wonder plant, along with corn and potatoes, is a major food staple for the Andean cultures. The Incas considered Quinoa sacred, referring to it as "chisaya mama" or "mother of all grains".

In contemporary times, quinoa is highly appreciated for its nutritional value. Its protein content is very high (12%–18%) and unlike wheat or rice (which are low in lysine), quinoa contains a balanced set of essential amino acids for humans, making it a complete protein source. It is a good source of dietary fiber and phosphorus, and is high in magnesium and iron. Quinoa is naturally gluten-free and is considered easy to digest. Because of all these characteristics, quinoa is being considered a possible crop in NASA's Controlled Ecological Life Support System for long-duration manned spaceflights.

Quinoa flour is used for making breads, biscuits, cookies, crepes, muffins, pancakes, tortillas, and even beer. It may be used on its own in some baking, most commonly in breads or flat breads, or combined with other gluten-free flours, such as rice flour, to create a lighter baking mix. Since quinoa flour does not contain gluten, when you are making your favorite recipes like risen breads and pie crusts, you should substitute up to 50% quinoa flour in your recipes. Quinoa has a mild, slightly nutty flavor.
