These items are CERTIFIED GLUTEN FREE.

We also ask that you apply a "common sense" approach to "gluten free" with our other items not listed on this page. It costs a producer extra money to be certified gluten free, and many small producers cannot afford this expense even if they ARE gluten free. How can gluten get into an organic sea salt? It cannot. How about an organic extra virgin olive oil? It cannot. If you have any questions about a product not listed here and its "gluten free" status we will be more than happy to contact the producer to get a definitive answer. Simply use the "contact us" link at this bottom of this page and send us an email.

Aji Panca Organic Chili Pods (dried)
Aji Panca Organic Chili Pods (dried) Be the first one to write a review

One of the most common types of aji (chili) in Peru, Aji Panca is 3 to 5 inches in length and has a thick flesh that matures from a green to dark red in color. Distinct from the other ajis in its spiciness, Aji Panca is mild in heat intensity (a heat level of 2 on a scale of 10; 1,500 Scoville units) and provides a fruity, berry-like flavor that goes well in stews, sauces, and fish dishes.

Aji panca is so sweet, so berry-like, that it can be finely chopped or ground into a powder and tossed into foods to add a sweet, mild heat.

To create a paste, remove the stems and soak ajis in water overnight. Drain and mix ajis in a blender with salt, pepper, garlic and extra virgin olive oil. For a more mild paste, remove the seeds and veins before blending. You can freeze the paste for longer storage as necessary.

Aji Amarillo Organic Chili Pods (dried)
Aji Amarillo Organic Chili Pods (dried) Be the first one to write a review

Aji amarillo, or amarillo chili, is the most common type of aji and is one of the most important ingredients in Peruvian cooking. It has a heat level of 7 on a scale of 10 (50,000 Scoville units). It is great in combination with meat, poultry, fish, vegetables, pasta, and rice dishes, and is used to season nuts.

The unique flavor of the Aji Amarillo makes it worth seeking out and incorporating into your cooking. Even though it is a "chili pepper" it has a lot of fruitiness combined with its heat, unlike poblanos or jalapenos which can be harsh. It is a very versatile chili, suitable for everyday use as it will complement your dish without overwhelming it.

Try them in these recipes:

  • Ceviche Con Tostones
  • Organic Aji Amarillo Chile Rellenos
  • Peruvian Inspired Chicken Stew

To create a paste, remove the stems and soak ajis in water overnight. Drain and mix ajis in a blender with salt, pepper, garlic and extra virgin olive oil. For a more mild paste, remove the seeds and veins before blending. You can freeze the paste for longer storage as necessary.

WuWanWo Soy Sauce - Rich
WuWanWo Soy Sauce - Rich Be the first one to write a review

WuWanWo means "forget me not", an apt name for a product with unique origins and an unforgettable flavor. WuWanWo is a collaborative effort between Piranske Soline and Taiwanese soy sauce makers. They weave their centuries-old traditions together to create a soy sauce with a sweet, oceanic aroma, and meaty taste.

This precious sauce is produced using only indigenous black soybeans, Piranske Soline sea salt from the Piran Salt Pans in Slovenia (a very famous salt source), brown sugar, and natural seasonings. This soy sauce is produced with absolutely no preservatives and it uses all non-GMO ingredients. Its balanced yet complex flavor is achieved through natural fermentation in traditional terra cotta pots for 180 days. The sauce is simply extracted from the pots and bottled.

It is an excellent umami foundation for marinades and salad dressings, and it elevates sashimi, sushi, spring rolls, tempura, dumplings and other light dishes to new heights your taste buds have never imagined.

This "Rich" soy sauce is characterized by bold, meaty flavors. Try it with stir-fried vegetables, rice, steamed fish, seafood, stewed or grilled meats, in barbecue sauces and glazes.

This was featured in "The Rosengarten Report" where he said:

"...it is extraordinary! Also made with non-GMO black soybeans, no wheat, and a 180-day fermentation, it is simply one of the most complex soy sauces I’ve ever tasted. The flavors are umami from not just Slovenia, but maybe even Mars (including an incredible blast of mushroom-like intensity). It’s very, very salty (as if to emphasize the Slovenian connection), but it finishes in the mouth with a lovely roundness. I love it for crudo: I buy me some very fresh fish, slice it sashimi-style, and gloss it lightly with Hei-Jin and extra virgin olive oil. Of course, feel free to use it in high-level Chinese and Japanese cooking as well.”

Marcona Almonds (Salted/Fried)
Marcona Almonds (Salted/Fried) Be the first one to write a review

Originating in Spain and recognized as the "Queen of almonds," Marcona kernels are plump, finely textured and crunchy, with a delicate flavor and sweetness.

These wonderful Spanish Marcona Almonds are sauteed in extra virgin olive oil, sprinkled with sea salt, and then vacuum sealed for maximum flavor and freshness. A beautiful balance of flavors... perfection!

Unlike most of our competitors who have almond pieces mixed in with whole almonds, we hand select the almonds and deliver only whole almonds to you. Our competitors also tend to use a lower quality sunflower oil, whereas we use extra virgin olive oil. It is a difference you can taste!

In order to ensure maximum flavor and freshness, these Marcona Almonds are vacuum-sealed. Therefore they can be stored anywhere, like your cabinet, desk drawer, or car, for a quick, healthy snack. They are also perfect to serve with aperitifs, as a complement to a cheese plate, or placed along side fresh fruit for dessert.

This product contains no gluten, dairy, or genetically engineered ingredients.

Leaf Lard (FatWorks)
Leaf Lard (FatWorks) Be the first one to write a review

This is quite possibly the finest lard available. It is rendered from the the prized "leaf" (internal fat which contains no meat muscle) which makes it less "porky" tasting than regular lard. This amazing lard is delicate, light, and mild tasting. Bakers have cherished Leaf Lard because it creates the best crusts and cakes while not imparting any flavor of its own. Leaf Lard also has a high smoke point (375F), making it perfect for frying and sauteing, especially when you want the natural flavors of your ingredients to shine. Fat Works Pure Premium Pasture Raised Leaf Lard is essential for anyone interested in cooking with traditional fat. Take a bite of what you make with it and you'll easily understand why we love having it in our own kitchens!

Lamb Tallow (FatWorks)
Lamb Tallow (FatWorks) Be the first one to write a review

We proudly announce our 100% Grass Fed, Pasture Raised Lamb Tallow. If you don't know about Lamb Tallow keep reading as this is one baa-d tallow. Some people find that lamb, in general, has a flavor that many in the west find a bit bit overpowering. But when it comes to the tallow itself, there is very little "gaminess" and it is in fact a traditional fat with a very subtle, mild (and did we mention delicious) flavor, making it ideal for sauteing your favorite leafy greens, roasting vegetables, and pan frying any and all meat. Lamb Tallow adds a piquant depth to soups and stews and of course, let us never forget the amazing and spudtacular things tallow can do to a potato! In fact, any root vegetable will roast or fry beautifully with Lamb Tallow. It would be easy to go the "meat and potatoes" route, however, if you are up for a little culinary adventure we suggest baking with Lamb Tallow, only because it makes for some of the most delicious, savory pies! And we didn't even mention the whole new world of Middle Eastern cuisine that is just a jar away with Lamb Tallow. (This beloved tallow is even used as a secret ingredient in traditional baklava recipes.)

Tallow is really as versatile as you make it. It is even used to make great lotions and soap.

Chicken Fat/Schmaltz - Organic (FatWorks)

If you don't know Schmaltz you are about to enter a whole new world of delicious cooking. No joke.

Ashkenazi Jewish cooking has used Schmaltz for generations and we are proud to bring this incredible fat to you! (As an aside the Ashkenazi Jewish population is known for having one of the most heart healthy communities in the world.)

Nothing really compares to Schmaltz. It has the richness of duck fat but is milder and more aromatic. Schmaltz adds complexity to a variety of dishes that you simply cannot reproduce any other way. Schmaltz is a joy to cook with and is the easiest way to add depth and complexity to leafy vegetables, stir fries, pan fried steaks, fish, poultry, soups, stews, baked goods, and for a special treat spread it right on a piece of bread like you would a high quality butter or fine olive oil. It's no exaggeration to say Schmaltz gives potatoes and other root vegetables a flavor that is beyond anything most of us have experienced. If potatoes could talk to Schmaltz they would say, "You complete me!" This Chicken Schmaltz is made with 100% Organic Free Range Chicken (which ain't easy to find!) and is rendered with the typical care and passion that you would expect from FatWorks.

If you would like to learn more about the joys of cooking with Schmaltz we recommend that you pick up a copy of Michael Rulhman's quintessential book on Schmaltz entitled, "The Book of Schmaltz-A Love Song to A Forgotten Fat."

The most wonderful small sardines in olive oil we have ever tasted come from the Estuaries of Galicia, Spain. This is a true Spanish food gem and we are very pleased to be able to offer it to you.

Rich in vitamins D and B12, they are also an excellent source of calcium and omega-3 fatty acids.

The Spanish believe canned seafood is a delicacy to be shared and enjoyed! They take great pride, and great care, to harvest the best seafood and package it with the utmost care. The result is the purest, most delicate, and exquisite tasting seafood on the planet! A true delicacy.

Do NOT be fooled by other sardines. Conservas de Cambados makes a "Gourmet" line, which is their highest quality, and the ONLY ones we sell. "Gourmet" is clearly at the top of the front label as shown in the photo, the "Conservas de Cambados" logo is prominently displayed, and the tin is rectangular with rounded corners. Their other line "Bogar/Alamar" is made with imported seafood (not from Spain) or with lower quality seafood from outside of Galicia.

When in doubt verify the front label says "Gourmet" at the top, "Made in Spain by CONSERVAS DE CAMBADOS, S.A. FDA 15066" at the bottom, shows the "Conservas de Cambados" logo, and it is in a rectangular tin with rounded corners.

Razor clams (Navajas) are long, slender clams with a wonderfully rich flavor and firm texture. These perfectly cleaned clams are hand-harvested and then hand-packed in their own seawater. We eat them straight out of the can. You can also warm them in a skillet with garlic and extra virgin olive oil, or for some novelty we suggest you lightly grill them. You may also want to try adding a small squeeze of lemon, a drizzle of extra virgin olive oil, and some crusty bread.

Conservas de Cambados is based in Galicia in Northeast Spain. This is the region of the Arousa Ría, which is well-known not just for its size, but also for the richness of its marine life. This area is particularly suitable for harvesting clams, cockles, mussels, and other bi-valves.

Belazu Organic Argan Oil
Belazu Organic Argan Oil Be the first one to write a review

A unique oil with a mildly toasted, nutty flavor. It is known as "the golden oil."

The Argan tree is unique to the South Western corner of Morocco and is called the "tree of life" due to the importance of this tree, and its fruit and oil, to Moroccan traditions and culture. This remarkable organic Argan oil is made by cold pressing the seeds inside the nut of the Argan fruit. It takes 100 kilograms (220 pounds) of fruit to produce just 1 liter (33.8 fluid ounces) of oil, meaning it is an extremely labor intensive oil to produce.

Once the fruit ripens, it is harvested and laid out in the sun to dry. The flesh of the fruit is removed, and the hard shell of the nut is cracked to remove the almond shaped kernels inside. These are gently toasted and, once cooled, ground in a stone ‘rotary quern’, similar to a stone pestle and mortar. The resulting nut paste is then massaged by hand to extract the luscious oil.

Rich in Vitamin E and linoleic acids, and with a high unsaturated fatty acid content (over 80%), this unique organic Argan oil is full of health-giving properties. Vitamin E promotes healthy hair, skin, and nails, and the unsaturated fatty acids are great for keeping the heart healthy and lowering cholesterol levels. Initial tests indicate it may reverse the metabolic changes that occur from a high sugar diet, thus being a natural aid in the fight against diabetes; and the high levels of antioxidants show promise in fighting cancer. It is light in color with a reddish tinge and it is milder in flavor than sesame or walnut oil, yet its taste is distinctly nutty. Traditionally used for cooking tagines and dressing couscous, organic Argan oil also adds a unique and wonderful flavor to salads and other North African dishes.

A few serving ideas:

  • Mix organic Argan oil with honey and yogurt like the Berbers do for a nutritious breakfast.
  • Make amlou: a mixture of Argan oil, honey, and crushed almonds. It tastes a little like peanut butter and is great on toast.
    • 1/2 pound roasted Marcona Almonds
    • 1/2 to 2/3 cup Belazu Organic Argan Oil
    • 1/3 cup raw honey
    • In a food processor, or mortar and pestle, finely grind the almonds. Add the Organic Argan Oil a tablespoon at a time. Now add the honey until the desired sweetness is achieved. Serve in a small bowl with slices of pita bread for dipping

This organic Argan oil is suitable for vegans, vegetarians, and is gluten-free.

Rural Moroccans always knew Argan oil was good for you, inside and out. They actually rub their faces with their hands after eating a couscous dressed with Argan oil. In the spirit of that tradition, we can also recommend it for its beauty uses!! Since this oil is organic AND "food grade" it is higher in quality than those other "cosmetic grade" oils on the market today.

This product may not be suitable for nut allergy sufferers.

Average rating:

The Castillo de Canena Estate has produced exceptional extra virgin olive oils in the Guadalquivir Valley of Andalusia in the south of Spain since 1780. This exceptional smoked oil is artisanally crafted by slowly infusing their high quality, hand-harvested, Castillo Arbequina Extra Virgin Olive Oil with naturally produced smoke from a mix of organic oak, beech, and birch woods. When you open the bottle you will smell, and taste, exquisitely smoked Arbequina with undertones of caramel, vanilla, and toffee. This unique oil is divine on its own, or you can pair it with your favorite recipes to add a smoky component to your dressings, marinades, and final dishes.

  • Brush it on bread, or just dip the bread right in.
  • Drizzle it on:
    • Vegetables.
    • Seafood, poultry, and meats.
    • Soup.
  • Use it to make a smoky hummus.
  • Pair it with your favorite vinegar for a smoky, delicious dressing or marinade.

In order to produce this wonderful, exquisite, cutting-edge cold smoked extra virgin olive oil, Castillo de Canena designed a unique process. Their burner allows the wood chips to slowly smolder. The smoke is then cooled, and passed through a water filter. They then slowly, over the course of 6 hours, release the cold smoke into the bottom of the tank which holds the Arbequina Extra Virgin Olive Oil. This artisanal process naturally imparts the smoky flavor and aroma into the oil.

This is the 11th occasion that the Vañó family has released a special edition "First Day of Harvest" (Primer Día de Cosecha) extra virgin olive oil to capture the very purest flavors of the olive crop. Just ripe olives, pressed within hours of harvest, create this extra virgin olive oil that is exploding with flavor!

Each release is commemorated with a unique bottle label, each designed by a different established name from Spain's creative community. For 2016, Castillo de Canena partnered with the film director Álex de la Iglesia to create a new label that clearly reflects his personality as a fan of First Day of Harvest extra virgin olive oils as well as of the world of comic books.

“It was very interesting and good fun to work on this project as the production of First Day of Harvest brings to the world of extra virgin oils the same magic, feelings and passion that the characters in my films and my books convey,” said Álex de la Iglesia, a great supporter of Spanish cuisine.

Furthermore, the filmmaker also confessed his passion for exotic food. “I love Vietnamese, Thai and Brazilian food, and it’s amazing how these delicious Castillo de Canena oils can fuse with these types of recipes to create the most amazing dishes,” he explained.

The Flos Olea Guide 2017 names Castillo de Canena the “Best Oil Producing Company in the World.” It has also selected the company’s extra virgin olive oils as the best on Earth, giving them the maximum possible score (98 points) for the 5th year in a row. These achievements put the Castillo de Canena extra virgin olive oils among the top 20 in the world.

  • Special red bottles protect the extra virgin olive oil from harmful light.
  • A very high percentage of oleic acid and polyphenols indicates outstanding quality.
  • No preservatives or artificial flavors.
  • This product contains no soy, gluten, nuts, dairy, or genetically engineered ingredients.

The First Day of Harvest Extra Virgin Olive Oils are two very robust oils coming from specially selected plots. These oils have potent personalities, excellent sensory qualities, extraordinary fragrance, harmony, and elegance.

By taking extraordinary steps to hand-harvest early, yielding about half the oil that would be obtained if the olives were left on the trees to mature another week, the Vañó family of Castillo de Canena offers us this rare treat, the best of the best. To have such vibrant, flavorful, First Day of Harvest extra virgin olive oils is an incredible pleasure.

One of Modena's most distinguished Balsamic vinegar manufacturers produces this delicate condiment which blends white grape must with white wine vinegar. A condiment rather than a vinegar because of its low acidity, the White Balsamic follows the standard methods of Balsamic Vinegar production. The white grape must is cooked at low temperatures in a vacuum to avoid darkening the blend before it is matured in a series of wooden oak casks.

    Average rating:

These exquisite anchovies, packed in the finest Spanish olive oil, are hand-packed according to traditional methods using carefully selected fresh fish harvested off the Cantabrian Coast in northern Spain.

The anchovy, a traditional food of the Basque Country, is a mainstay of this region's fishing economy. The Spanish name "boqueron" comes from the size of the anchovy's mouth or boca, which is large in proportion to the rest of the body. Anchovies are typically harvested in the spring when they accumulate the most fat and flavor. Small nets are used to protect the quality of the fish and reduce by-catch. Once caught they are gutted, placed in barrels with salt-layer separations, and weighted. Once the fish have matured, about 3-7 months, they are washed to remove the bones and skin, and then canned in high quality olive oil.

Anchovies are high in Omega-3 fatty acids which reduce cholesterol and help in the prevention of cardio-vascular disease. They are also rich in iodine, calcium, Vitamins A, D, B12, B6, B2, and unsaturated fatty acids such as linoleic acid.

    Belazu Beldi Preserved Lemons
Belazu Beldi Preserved Lemons Be the first one to write a review

Preserved doqq lemons are an authentic, and essential, component of many North African, Mediterranean, and Indian recipes.

These traditional doqq lemons (Citrus limonum Risso var. pusilla R), known in Morocco as citron beldi, or l'hamd beldi, grow in the Taroudant region outside of Agadir.

The thinner skin, and fragrant aroma, of doqq lemons, makes them the most highly prized lemons of North Africa. Paula Wolfert, an expert on Moroccan cuisine, considers them the crème de la crème in her book "The Food of Morocco".

These lemons have a delicate "zing", along with a tantalizing sweet and sour aroma, that is unmistakably and evocatively North African.

    A few serving ideas:

    • Add these lemons to tagines, roast chicken, fish, salsas, and salads - all kinds of Mediterranean cooking, to get that delicate citrus flavor.
    • Make a traditional Moroccan Tagine.
    • Create your own Ngam nguv, a traditional Cambodian chicken soup with whole preserved lemons.
    • Combine them in your recipes that use olives, artichokes, seafood, veal, chicken, and rice for added flavor and complexity.
    • Use them as an accompaniment to curd rice, which is often the last course in South Indian Cuisine.
    • Add the pickled pulp and liquid to Bloody Marys and other beverages where lemon and salt are used.
    • Combine preserved lemons with horseradish if you want to make an American-style cocktail sauce.

They are so easy to incorporate into your recipes, simply give them a quick rinse under cool water to remove any excess salt, and then chop them up... you use the entire lemon, rind and all!

Note: preserving the lemons in salt removes the bitterness normally associated with the rind and pith... what you will find is a clean, bright, pure lemon flavor! Take a slice, pop it in your mouth, and see how magical preserved lemons can be!

No artificial flavors, colors, or preservatives.

    Suitable for vegetarians and vegans.

    Gluten-free.

    Refrigerate after opening.

Castillo de Canena 'First-Early' Royal Extra Virgin Olive Oil Be the first one to write a review

The Castillo de Canena Estate has produced exceptional extra virgin olive oils in the Guadalquivir Valley of Andalusia in the south of Spain since 1780. The 'Royal' olive varietal is an ancient variety native to Jaén, Andalusia. In the 19th century its low-yields caused many olive oil producers to abandon it as it was not commercially viable. The Royal Olive was on the brink of extinction until Castello de Canena planted it at their estate, thus saving this heirloom olive for future generations to enjoy.

FIRST-EARLY ROYAL is harvested early in the season when the olives reach their peak flavor and aroma.

    • Brush it on bread, or just dip the bread right in.
    • Drizzle it on:
      • Vegetables and salads.
      • Seafood, poultry, and meats.
      • Soups.
      • Tomato sauces.
    • Pair it with your favorite vinegar for a delicious dressing or marinade

This is a deep green, medium-bodied, extra virgin olive oil with fresh and intense fruitiness. On the palate it is balanced, round, and shows a smooth entry, with all the flavors in perfect harmony.

The ancient heirloom Royal olive varietal produces one of the rarest extra virgin olive oils in the world. Buy a bottle and experience the extraordinary flavors only Canena's First-Early Royal can achieve.

The Bonito del Norte is the most valued member of the tuna family - highly appreciated for its white flesh, exquisite flavor, and delicate texture.

It is fished using traditional hook and line methods, thus preserving the wonderful texture and flavor which is often lost when fishing with nets. This dolphin-free tuna from the Basque region of Spain (Bay of Biscay in northern Spain) is then gently cleaned by hand.

Piment dEspelette Powder AOP - La Maison Du Piment (250 gram)
Piment d'Espelette Powder AOP - La Maison Du Piment (1 kilogram) Pre-Order Be the first one to write a review

Piment d’Espelette is famous for its modulated, food-friendly heat as well as its "sweet red pepper" perfume, which bring wonderful layers of flavor to your dishes.

The A.O.P. (Appellation d'Origine Protégée) designation means that this coveted spice can come only from the tiny, 22-square-kilometer region in and around Espelette, the French Basque town in a hilly, verdant region near Bayonne. The restricted area and precarious weather conditions of the Basque region limit the supplies of this precious spice.

Commercial cultivation of this spice originally began as a product of housewives’ gardens. Women grew the peppers in small quantities for home meals and sold the excess for pocket money. In fact, Marie-Jeanne, the mother of our producer at La Maison du Piment, Vincent Darrichion, was one of those women! She launched her family into the espelette business from her own kitchen garden.

The entire harvest is done by hand. The toil begins in late March, when the seeds must be sprouted in the greenhouse. Then in April, the seedlings are teased apart and placed into individual pots where they are tended in the greenhouse until they are about 18 inches tall. When the size is right, they are hand planted in the field. The peppers are like "indeterminate" tomatoes in that they ripen over a period of time. So the harvest can take a month or more, with many passes through the fields, as the farmer individually snaps or cuts the stem of each ripe pepper, being very careful to keep the top of the pepper intact so it will not be subject to rot. After the harvest, the peppers go back to the greenhouse where they are sun/air dried on wooden trays. The final step in this artisanal slow-drying process involves stacking these trays in a low-temperature oven for several hours to achieve the perfect texture.

The A.O.P. rules strictly govern the growing area, cultivation practices, drying protocol, and the size (mesh) of the Espelette powder itself. A.O.P. thus guarantees you are getting authentic Piment d'Espelette!

    • Mix with sea salt, paprika, and cumin, rub over a pork chop or loin, and bake.
    • Add Piment d’Espelette and a little lemon juice to your favorite mayonnaise. Dip fried potatoes or steamed artichokes in it.
